Today’s Rhubarb recipe is one of my favorites, Rhubarb Bread. This quick bread is so moist and just sweet enough with little pieces of tart rhubarb sprinkled throughout. It freezes really well so I always make a couple loaves at a time! Delicious with tea or coffee, or for breakfast. Recipe is linked below, the only change I made was instead of the glazed top I did a cinnamon sugar top and swirled it in!

I love dandelions! Not only are they bright and happy, the bees love them, and they are also edible. The leaves are delicious in salad, you can make a tea with the roots, and the flowers are also edible. We made a beautiful batch of Dandelion Jelly, it is such a pretty color and has a lovely flavor similar to honey 🐝

We have been busy doing lots of preserving the last few weeks, and filling cucumber orders! Cherry tomatoes, peaches and cream corn, and carrots are the next crops we will have ready soon - and all kinds of small pumpkins and gourds are already ripe as well, I can’t wait to decorate for fall! Meanwhile on this rainy day we are testing out some fermented dill pickles - yum!

Blueberry season is coming to an end, but I’m happy to say our bushes exploded this year! Enjoying the last of them in blueberry cobbler - that’s an acceptable breakfast for Saturday morning right? 🫐

Blueberry Cobbler

In a bowl mix:
6 cups blueberries
1/3c sugar
1/3c brown sugar
2 tbsp cornstarch
2-1/2 tbsp lemon juice
1/2 tsp cinnamon

Spread in a greased baking dish. In another bowl mix:

1-1/2 cup flour
1/3c sugar
1/3c brown sugar
1-1/2 tsp baking powder
1/2 tsp salt

Cut in 1/2 cup cold butter. Pour in 1/3 cup boiling water and mix well. Drop in spoonfuls over the berry mixture. Mix 2-3tbsp sugar and 1 tsp cinnamon and sprinkle over the top. Bake at 375 for 45 min, cool slightly, and enjoy with a scoop of vanilla icecream! (Or for breakfast 😋)

Is anyone else busy canning? We love preserving the food we grow, having your own veggies and fruit that aren’t sprayed and filling the shelves is so rewarding, plus it helps keep our bellies full all winter! The past few days we’ve made sliced dill pickles for burgers and sandwiches, blueberry pie filling which we also love on top of pancakes/yogurt/cheesecake/icecream, dill relish for burgers/hotdogs/tartar sauce, mustard pickles, blueberry jam, and dill pickle spears. Share a picture of what you’ve been making if you also like preserving!

We are making sliced dill pickles this morning and while peeling garlic we just dug out of the garden last week, I am reminded why it is awesome to grow your own food - these look like shallots or small onions but are actually individual cloves of organic garlic! Beautiful! 🧄 🧄🧄

This afternoon’s project! We wanted to add to our strawberry rows, so we grew 60 new strawberry plants off of our main plants. They have beautiful roots and we transplanted them all into new rows today. Our 6 year old loves to help, he carried the pots and helped water after they were planted 🍓
