Ingredients:

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 1 cup shredded carrots
- 1 cup grated apple
- 1/2 cup crushed pineapple, drained
- 3/4 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup chopped walnuts (optional)

Directions:

1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, and ground cinnamon.
3. Add shredded coconut, raisins, shredded carrots, grated apple, and crushed pineapple to the dry ingredients. Mix until well combined.
4. In a separate bowl, whisk together vegetable oil, eggs, and vanilla extract.
5. Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in chopped walnuts.
6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
7. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
