Gem squash filled with sweet potato and butternut
Serves 6
Preparation time: 10 min
Cooking time: 30 min..
500 g sweet potato, chopped
500 g butternut, chopped
6 garlic cloves, crushed
1 red chilli

45 ml (3 T) oil
6 gem squashes
handful of chives, chopped
1 Preheat the oven to 200 °C. Put the sweet potatoes and butternut in a roasting pan with the garlic, chilli and oil. Rub the mixture over the vegetables until well covered.
2 Roast in the oven for 30 minutes or until the vegetables are tender then mash together.
3 While the vegetables are roasting, halve the gem squashes and put in a large saucepan skin side down. Cover the base of the saucepan with water and cook, covered with a lid, for 15 minutes or until tender. Spoon or pipe the sweet potato mixture into the squashes and sprinkle with the chives.

GEVULDE SKORSIES

2020 LOWCARB IN SA

2 groot skorsies
250 g bees maalvleis
250 g spek stukkies
1 E olie
sout en peper na smaak
4 E gerasperde cheddar kaas

Halveer die skorsies en kook dit tot gaar, maar nie pap nie (moet nie die pitte voor die tyd verwyder nie). Haal die gaar skorsies uit die water en skep die pitte versigtig uit en sit eenkant. Terwyl die skorsies kook, braai die maalvleis en spek in die olie tot gaar. Geur met sout en peper. Vul die skorsies met die vleis, plaas een eetlepel kaas oor elk en rooster in die oond tot die kaas gesmelt en goudbruin is. Bedien warm met bykos van keuse. Plaas orige vleis in die yskas en gebruik as vulsel in omelet die volgende oggend.

STUFFED GEM SQUASH
PORTIONS: 4

2 large gem squash
250 g ground beef
250 g bacon bits
1 T oil
salt and pepper to taste
4 T grated cheddar cheese

Halve the squash and cook until soft but not soggy (do not remove the seeds before cooking). Remove the cooked squash from the water and carefully scoop out the seeds and set aside. While the squash are cooking, fry the mince and bacon in the oil until cooked. Season with salt and pepper. Fill the squash with the meat, place one tablespoon of cheese over each and roast in the oven until the cheese is melted and golden brown. Serve hot with side dish of choice. Place remaining meat in the fridge and use as a filling in omelette the next morning.
