With the weather outside as cold as it is, we’ll be looking for something warm and cozy for dinner tonight.
Cabbage and Smoked Bratwurst soup
2-3 Carrots chopped
1 Med Onion chopped
2-3 Cloves Garlic minced
4 Cups Chicken stock
2 Cups Water
3-4 Potatoes, cubed
2-3 Tsp Italian Seasoning
1 pack Smoked Bratwurst, sliced
1-2 pack(s) Coleslaw mix OR ~1/2-1cabbage, sliced thinly.
Salt and pepper to taste
Cook the onion in your pot with a little oil until translucent then add garlic. Once fragrant add carrots, potatoes, water and stock. Bring to a boil and cook until potatoes start to soften then add cabbage, seasoning and sliced sausages.
Cook until cabbage is tender.
Enjoy with your favourite crackers or garlic toast.

Grilled Pork Chop with Pineapple Relish🍍
Marinade
4 Bone in Pork Chops or Pork Steaks, about 2 pounds
1 can Pineapple Chunks. Use juice, reserve the chunks for relish
1/4 cup Soy Sauce
1 tsp Fresh Ginger
2 Cloves Garlic
2 Green Onions
Drain the juice from the pineapple and set the chunks aside to use for the relish. Process the juice, soy sauce, ginger, garlic and green onions in a food processor/blender or chop everything finely.
Marinate chops in bag or dish in the fridge for 4 hours or overnight.
Pre-Heat grill to Medium. Remove chops and pat dry. Grill chops, turning once for a total of 10 minutes, depending on thickness, or until chops are cooked. Serve topped with pineapple relish. See below
Relish:
Reserved Pineapple Chunks
1/2 cup Red onion, minced
2 Tbsp Lime Juice
2 Tbsp Cilantro, chopped
1 Tbsp liquid Honey
1/2 tsp Salt
Combine ingredients in a medium bowl, cover and refrigerate until served.
