GUT FRIENDLY SPRING SALAD 🐟
This super filling, fresh and gut-friendly salad will leave you wanting more! Cabbage is coming in hot to feed your good-bacteria in the gut and fennel is coming along to decrease inflammation + gas in the GI tract and fight off any bad-bacteria hiding down there! 🦸🏼♀️
Recipe:
🌷1 lb wild caught salmon filet, seasoned with salt and pepper + drizzled with oil
🌷1 cup of cooked and cooked couscous (quinoa would also work!)
🌷1/2 head of green cabbage, thinly sliced
🌷1/2 head radicchio, thinly sliced
🌷1 large fennel bulb, core and fronds removed + thinly sliced
🌷2 cups of strawberries, quartered
The dressing:
🌱1/2 cup unsweetened grass-fed plain yogurt (or plant based, goat, whatever you like!)
🌱1/2 cup extra virgin olive oil
🌱 juice from 2 limes
🌱4 tsp raw honey
🌱1 small bunch of chives, thinly chopped
🌱1/2 tsp salt
🌱 1 tsp pepper
*whisk together until we’ll combined, keep in the fridge until ready to use*
1. Bake the salmon at 350F for 12-15 mins, let cool
2. On a large platter or bowl mix the cabbage, fennel, radicchio and couscous with 2/3 of the dressing
3. Place the strawberries around the salad, tucking them in around your veggies
4. Flake your salmon into 1 inch cubes and place it around your salad

MY FAVOURITE GREEK SALAD 🌞
nothing screams Sunshine quite like a fresh + juicy Greek Salad am I right? The trick to this little beauty is to use fresh mint and capers! (I am not an olive girl pls don’t come after me 😂)
Recipe:
🌸1 large cucumber, peeled in stripes and chopped
🌸1 pack of rainbow cherry tomatoes, halved
🌸 1/2 a red onion, thickly diced
🌸 1/2 cup feta, crumbled
🌸 handful fresh mint leaves
🌸 1/8 cup capers
For the dressing:
🌼2 cloves of garlic, minced
🌼1 tsp spicy Dijon mustard
🌼1tsp Italian seasoning
🌼1/4 cup raw apple cider vinegar
🌼1/2 cup extra virgin olive oil
🌼1 tsp salt
🌼1/2 tsp pepper
*shake in a jar to combine before adding to salad*
Mix it all up and let marinate in the fridge for a couple of hours before serving for the best results 🤤

FOOD SHAMING: to judge someone’s food choices and comment on them, making them feel ashamed of these choices

“Wait.. YOU’RE eating that???”

An unhealthy relationship with food is something I struggled with for years. For me it looked like not eating because I was afraid of what people would say about my food choices. “Erin would NEVER eat that” was something I would hear quite often and a lot of the time I would be really hard on myself if I ate something that wasn’t deemed as “healthy”.

It wasn’t until I learned to have a healthy relationship with the food I was eating that I could feel comfortable eating what makes me feel happy and this is something I want for all of my clients.

One of my favourite tasty treats is Oat Mylk bar!! Nicolette is the queen 👸 when it comes to chocolate.

We’re all human. If it makes you happy? Eat the damn chocolate. 🍫

Cranberry Bliss Bars ✨
(Aka my favourite winter treat!!)

BARS
⛄️1 cup softened butter
⛄️1 cup brown sugar
⛄️1/3 cup cane sugar
⛄️3 large eggs
⛄️2 tsp orange extract or vanilla (I used 1 drop orange essential oil and 1 tsp vanilla)
⛄️2 cups flour
⛄️1 1/2 tsp baking powder
⛄️1 tsp ground ginger
⛄️3/4 cup dried cranberries
⛄️3/4 cup white chocolate chips
FROSTING
❄️1 cup cream cheese
❄️2 tbsp butter
❄️3 cups icing sugar
❄️1 tsp orange extract or vanilla
TOPPINGS
🤶🏻1/3 cup chopped dried cranberries
🤶🏻1-2 tbsp grated orange zest
🤶🏻1/3 cup white chocolate chips
🤶🏻1/2 tsp coconut oil
To Prepare:
BARS:
Beat together butter and sugars, gently add in eggs and orange/vanilla extract. Add flour, baking powder, ginger and beat briefly. Stir in cranberries and chocolate chips.
Spread the thick batter on a 10x13 inch pan lined with parchment paper and bake at 350 F for 20-24 mins (or until edges are browned).
FROSTING:
Blend cream cheese and butter until fluffy. Add in orange extract and icing sugar and beat until well combined. Spread out on completely cooled bars (I didn’t wait long enough 😛)
TOPPINGS:
Zest the orange over your sheet of bars and Sprinkle chopped cranberries. Melt the white chocolate chips with a bit of oil and drizzle over your bars.
Wait one hour to allow everything to set before cutting (another thing I didn’t do 🤪)
If you’re seeing this, I challenge you to take 3 deep belly breaths. Between the flooding, the sinkholes, the highways closing, people panic buying all of the food and gas there’s hardly any room to feel at ease (plus the million other things going on in the world right now 🙃)
Take this moment to release this stress, come back into your body and maybe catch a glimpse of a few snowflakes outside ❄️

Covid has really put us through the ringer. For those of you who don’t know Luke and I only saw eachother for 5 weeks in 2020, when he came to Canada and then we travelled to Nicaragua together!
He returned home to Australia March 3rd and then with borders closing due to COVID I didn’t see him again for another year (to the day!!)
These last few months have felt like a dream… we’re together again and I couldn’t ask for anything more✨
Here’s hoping we won’t have to do the distance again anytime soon🥲💛
