New Orleans Cooked Shrimp
Serves 4, 1 protein, 1/2 starch, 1 fat
Ingredients
1/2 cup (4-ounces) cold unsalted butter, cut into pieces, divided
2 dried or fresh bay leaves (optional)
3 garlic cloves, minced
1 tablespoon Creole or Cajun seasoning
3/4 teaspoon freshly ground black pepper
3/4 cup lower-sodium chicken broth
1/3 cup Worcestershire sauce
2 tablespoons fresh lemon juice (from 1 lemon)
1 1/2 pound jumbo (16/20) unpeeled, raw shrimp
Chopped fresh parsley, optional, for garnish
Warm crusty baguette, for serving
Method
Melt the butter:
Melt 3 tablespoons of the butter in a large cast-iron skillet over medium-high heat, stirring occasionally, until the foam subsides and the butter starts to smell nutty, about 4 minutes.
Make the sauce:
Add the bay leaves (if using), garlic, Creole seasoning, and pepper. Cook, stirring constantly, until fragrant, about 1 minute. Add the broth, Worcestershire sauce, and lemon juice. Bring to a vigorous simmer.
Simmer, stirring occasionally, until the sauce reduces to about 2/3 cup and coats the back of a spoon, 6 to 8 minutes.
Cook the shrimp:
Add the shrimp to the skillet and reduce the heat to medium. Cover and cook, stirring often, until shrimp are pink and just cooked through, about 4 minutes.
Turn off the heat and stir in the remaining 5 tablespoons of butter until melted, 1 to 2 minutes. Garnish with parsley and serve with bread to soak up the sauce.
Shrimp does not reheat well, so we do not recommend saving leftovers for more than 1 day.

15-Minute Salmon Picatta
Serves 4, 1 protein, 1 fat
Ingredients
4 (6-ounce) skin-on salmon fillets
1 teaspoon kosher salt, plus more to taste
Freshly ground black pepper, to taste
4 tablespoons unsalted butter, divided
2 garlic cloves, minced
1/2 cup dry white wine
1 small lemon, zested and juiced
2 tablespoons capers
1 tablespoon Dijon mustard
Chopped fresh parsley, to garnish (optional)
Method
Season the salmon:
Pat the salmon fillets dry with paper towels, then season on both sides with the salt and several grinds of black pepper.
Sear the salmon:
Melt 2 tablespoons of the unsalted butter in a 10-inch nonstick skillet or well-seasoned cast iron skillet over medium heat. Add the salmon skin-side up and sear until golden brown, about 3 minutes. Flip and continue to cook until the skin is lightly crisp, about 3 minutes more.
Transfer the salmon skin-side down to a plate. It may not be cooked through, and that’s okay—it will finish cooking in the sauce.
Make the sauce:
Add the garlic to the pan and sautè until fragrant, less than 1 minute. Pour in the white wine and simmer, scraping up any browned bits on the bottom of the pan with a wooden spoon, until just slightly reduced, about 1 minute.
Reduce the heat to medium-low. Add the lemon zest and juice, capers, Dijon, and remaining 2 tablespoons butter. Stir to combine and melt the butter. Taste and season with salt and pepper as needed.
Finish cooking the salmon:
Return the salmon skin-side down to the pan. Simmer until just cooked through and an instant-read thermometer inserted into the thickest part of the salmon registers 120°F to 130°F (for medium-rare), 1 to 2 minutes. If you like your salmon medium-well or well-done, cook for a few minutes longer. Garnish with the parsley, if desired.

Ingredients
3 tablespoons unrefined coconut oil, divided
3 large eggs, beaten
1 small yellow onion, finely chopped (about 3/4 cup)
1 medium carrot, chopped (about 1/2 cup), optional
5 medium garlic cloves, finely chopped
2 tablespoons Thai red curry paste
3 tablespoons mirin
4 cups cold, day-old cooked long-grain white rice
1 1/4 teaspoons kosher salt
2 cups torn cooked chicken breast (like rotisserie chicken)
1/2 cup frozen green peas
3 tablespoons packed Thai basil leaves
Method
Cook the eggs:
Heat 1 tablespoon of the coconut oil in a large nonstick skillet or wok over medium-high heat. Add the eggs and cook, stirring and folding often to form small curds, until set, about 1 minute. Transfer eggs to a plate and set aside.
Cook the vegetables:
Melt the remaining 1 tablespoon of coconut oil in the same skillet. Add the onion and carrot and cook, stirring occasionally, until starting to soften, about 4 minutes.
Add the garlic and curry paste and sauté until the curry paste has coated all of the vegetables, about 1 minute. Add mirin and cook until evaporated, about 1 minute.
Add the rice and remaining ingredients:
Add the rice and salt and cook, stirring constantly, until the rice is nicely coated in oil and crispy in spots, 2 to 3 minutes. Add the chicken, peas, and reserved scrambled egg and stir until heated through, 1 to 2 minutes.
Transfer to a serving platter or plates and garnish with the basil. Serve immediately.

Ingredients
3 tablespoons balsamic vinegar
2½ tablespoons unsalted butter, melted

1 teaspoon grated garlic
¼ teaspoon salt
⅛ teaspoon ground pepper
1 pound cremini mushrooms, quartered
Chopped parsley for garnish (optional)
Directions
Preheat oven to 425°F. Line a large rimmed baking sheet with foil.
Whisk 3 tablespoons vinegar, 2½ tablespoons melted butter, 2 teaspoons mustard, 1½ teaspoons honey, 1 teaspoon garlic, ¼ teaspoon salt and ⅛ teaspoon pepper together in a large bowl. Add 1 pound quartered mushrooms; toss until evenly coated. Spread in a single layer on the prepared baking sheet.
Roast, stirring once halfway through, until the mushrooms are tender and browned and the sauce has thickened enough to coat the mushrooms, 15 to 20 minutes. Transfer to a plate and garnish with parsley, if desired.
Creamy Egg Salad (no mayo!)
Serves 4
1 Serving = 1 protein
Ingredients:
6 eggs
½ cup cottage cheese
1 tablespoon lemon juice, fresh squeezed
½ teaspoon mustard powder
black pepper, to taste
2-4 tablespoons dill, freshly chopped
2 tablespoons green onions, diced
Directions:
Hard boil eggs. Once cool, peel and separate the yolks from the whites. Roughly chop the egg whites. Set aside. Add the yolks to a large mixing bowl. Then, add mustard powder, fresh squeezed lemon juice, cottage cheese, and black pepper. Mix until well combined. Next, fold in the diced egg whites, chopped dill, and chopped green onion until combined. Chill. Divide into 4 equal portions and serve.

Composed Bean Salad with Basil Vinaigrette
Serves 8, 1/2 protein, 2 vegetable, 1/2 fat
Ingredients
2 cups green beans (about 8 ounces), trimmed
½ cup fresh basil, plus 2 tablespoons chopped for garnish
1 small shallot, quartered
¼ cup extra-virgin olive oil
3 tablespoons red-wine vinegar
2 teaspoons honey or agave syrup
2 teaspoons Dijon mustard
¼ teaspoon salt
½ teaspoon ground pepper
1 15-ounce can chickpeas (see Tip), rinsed
1 15-ounce can dark red kidney beans, rinsed
1 15-ounce can black beans, rinsed
1 15-ounce can cannellini or navy beans, rinsed
1 cup halved cherry tomatoes
½ cup very thinly sliced radishes
Directions
Steam green beans in a large saucepan fitted with a steamer basket until crisp-tender, about 4 minutes. Spread them out to cool.
Meanwhile, combine 1/2 cup basil, shallot, oil, vinegar, honey (or agave), mustard, salt and pepper in a blender. Puree until smooth.
Arrange the green beans and remaining ingredients on a platter. Serve with the dressing. Garnish with the chopped basil, if desired.

Make Ahead Tip: Cover and refrigerate green beans (Step 1) and dressing (Step 2) in separate containers for up to 1 day.
Try homemade beans instead of canned. Start with 1 pound of any type of dry beans and rinse well. Place in a large bowl and cover with 2 inches of cold water. Let soak at least 8 hours or overnight. (If you're in a hurry, put the beans in a pot and cover with 2 inches of water; bring to boil, boil for 2 minutes. Remove from heat and let stand, covered, for 1 hour.) Drain the beans, transfer to a large pot and cover with 3 inches cold water. Bring to a boil, skimming off any foam. Reduce heat to a gentle simmer; cook, stirring occasionally, until the beans are tender, 30 minutes to 2 hours. (Cooking time varies depending on the type and age of the bean; start checking tenderness at 30 minutes.) Wait until the beans are almost tender to add salt; adding it too early can prevent beans from softening. (Use about 1 teaspoon salt per pound of beans.) Refrigerate beans in their cooking liquid for up to 1 week or freeze for up to 3 months. One pound dry beans makes 5 to 6 cups
