I baked cakes as a homage to my Dad, he LOVED any dessert but cakes he thought were special. Citrus Ombré cake, Lemon-Almond Butter cake, Upsidedown Rhubarb cake, Sour Cream Lemon Tart with fresh Strawberries and a batch of Macaroons for and a couple cakes too!

Apricot and cream cheese tart, lemon-almond butter cake, coconut macaroons and I made some double chocolate and dried cherry cookies (thinking of you Gordon!) There’s lemon cheesecake and Citrus Ombré Cake at Black River Market, would go great with their delicious gelatos😋

All this dreary weather makes me want comfort food…cinnamon buns (don’t forget the cream cheese icing!), blueberry coffee cake, coconut macaroons, fig bars, and pastelitos which is homemade guava jam with cream cheese encased in puff pastry.

This weekend’s treats….Maple Pecan Pie (with Kinsip’s Maple Whisky), a buttery-lemony cake with my own lemon curd filling topped with whipped cream and lemon curd (because who doesn’t love lemon curd!) 😋 Have a great weekend!

I’m pretty excited about the upcoming eclipse so I made some eclipse cookies! Traditional shortbread with a dark chocolate topping, something new; pastelitos; homemade guava jam, cream cheese inside puff pastry and of course the favourites; pecan pie brownies, turtle bars, macaroons and blueberry coffee cake. Coconut Macaroons! Made with organic cane sugar and PEC honey 😋, one of my favourites. Blueberry coffee cake, pecan pie brownies, and something new for the peanut butter lovers; a peanut butter bar (chocolate crust, peanut butter with cream cheese and whipped cream topped with a dark chocolate ganache and salty roasted peanuts). Open all weekend!
