Happy Days Dairies was founded in 1993 by Donat Koller, an artisan cheese maker originally from Switzerland who came to Canada to start a cheese making business. What started as a small family farm and cheese making operation in Salmon Arm, British Columbia supplying local customers and stores in the Okanagan has grown into the largest provider of pure and natural goat milk products in Western Can
Our goat milk is all natural, easy to digest, full of essential vitamins and minerals and is a top notch source of non allergenic protein.
Our yogurt is made in Alberta's Crystal Springs .cheese . They make a variety of cow and goat milk products. A family run business making products from family run Albertan farms. You can't get more local and Canadian than that!

What are pre and probiotics?
Prebiotics are food compounds that help beneficial bacteria like probiotics grow and be active. Prebiotics are food for probiotics. They keep the beneficial and necessary bacteria in our gut active and healthy so they can produce nutrients for the colon cells. Prebiotics are non-digestible so they pass through the gastrointestinal tract.
Oligosaccharides are the main source of identified prebiotics.
What are probiotics?
Probiotics are live bacteria that have a beneficial impact on our health, usually related to digestive health. The most common probiotics is yogurt, containing LB bulgaricus and Sc thermophilus. Other well known probiotics are Acidophilus and Bifidus and Kefir cultures.
Benefits of probiotics:
The balance of bacteria in our digestive tract has a big influence on our overall health. Probiotics help to restore or maintain this balance. Imbalance means there are too many bad bacteria versus good bacteria. This can cause digestive issues, weight loss or weight gain, loss of energy or allergies.
Here some of the most common possible benefits:
Treat, avoid or reduce diarrhea, excessive gas or bloating.
Probiotics are a must during antibiotic treatments, since often these medications reduce the bacteria in the gut and throw off the balance. Probiotics will help restore this.
May reduce allergies or eczema.
Boost the immune system. Probiotics reduce harmful bacteria in the gut and promote the production of natural antibodies.
Goat Milk has a large variety of oligosaccharides, which as mentioned above are natural occurring prebiotics. The fermentation of goat milk grows billions of probiotics, which further enhances the use of the prebiotics. Fermentation further gets rid of all lactose and adds flavour to the milk.

Happy Days Feta Cheese 🧀❤ It’s a great summer cheese, wonderful on salads and pizza. It has a crumbly yet creamy texture and is quite salty. Traditionally Feta cheese is kept in a salty brine. It has a distinct flavour, especially made from goat milk. Originally Feta was only made from sheep and goat's milk.
Goat or sheep milk feta has a more distinct flavour than cow milk feta and especially sheep milk feta has a very creamy, less crumbly texture.

Glad that I catch up the short annual harvest period of haskap berries and purchase two units from the great yesterday!
I put haskap berries to my smoothies with goat milk kefir , organic h**p seeds , basil and salt, together with some tasty cherry tomatoes and an avocado to break my 18-hour intermittent fast 😋

Kefir originated from parts of Eastern Europe and Southwest Asia. The name is derived from the Turkish word keyif, which means “feeling good”.
Traditionally Kefir is made from a “mother culture” also called kefir grains, which is a mixture of yeast and lactic acid bacteria.
These grains stay in the milk until it has fermented, then it is removed and added into the next batch of milk.
The bacteria turn the lactose into lactic acid, which ads flavour and acidity to the product. At the same time the consistency of the product gets thicker.
In commercial production often one-time-use kefir cultures are used, due to food safety reasons.

⭐Alberta Farm Tour Stop #4 - Lesher Family Farms 🚜
In the beautiful area of Lacombe Alberta this goat dairy has a unique way of milking. The goats are trained to jump up into the milking spaces to eat their grain while they are being milked. This gives the farmer easier access to milk and a cleaner space to work in.
Goats love milking time. Not only does milking relieve the goat of the milk, but they get a snack while milking. The goats learn quickly and it is fun to watch them file in and jump up.
Tom and Karen Lesher have an amazing and open facility housing around 500 goats. The goats have large open sections dedicated to specific goat needs such as breeding, milking, young, and dry. Goats are sensitive to the outdoor elements and prefer the shelter and soft bedding rather than the cold winds and harsher Alberta weather in April.
Goat milk benefits ❤🐐🥛
Goat milk is an excellent source of vitamin A, protein, calcium, potassium, phosphorus, and magnesium. The protein in goat’s milk is highly digestible making it easier for your body to process. Goat milk is higher in prebiotic carbohydrates called oligosaccharides, they help maintain the beneficial bacteria in the gut. They are the same carbohydrates that are present in human breast milk.
Goat’s milk is about 12% per cup lower in Lactose than cow’s milk (but not lactose free). People with a mild intolerance to lactose can sometimes consume goat’s milk. Goat Kefir is fermented and lactose free, so often those with lactose-intolerance can consume goat kefir.
Alberta Farm Tour 🐐🌎 Our 3rd stop in Alberta was the Klok Family Farm in Picture Butte.
The Klok farm has been in the family for 27 years and the past 12 years has been spent farming goats. Originally a hog farm, the family switched to goats as a better alternative and owner Gerard Klok stated that he really enjoyed the goats.
The Klok family has been a team with Happy Days Dairy for the past 5 years. They have 3 children and 2 grandchildren that now enjoy the fun of goat farming. Their goat herd is energetic and happy, enjoying large spaces, fresh air, and quality feed.

Second stop, Vanderberg Family Farm. 🐐❤
Our second stop was at Vandenberg Farm. Ben and Jaqueline Vandenberg live in southern Alberta and have been producing Goat milk for Happy Days for 15 years. They milk over 300 goats. Their emphasis for animal health shows extremely healthy and well cared for animals.
Crystal springs cheese was our first stop in Alberta. Being so close to local farmers they are now a custom processor for Happy Days goat cheese. Happy Days owner Donat Koller made cheese with artisan Jacco Beyer to produce the first batch of goat mozzarella.
Crystal springs creates a variety of artisan yogurts and cheeses, specializing in feta. They have a cafe on site where you can purchase their products along with enjoying a meal. Their cheese, like Happy Days, is made from locally sourced milk.
In this post:
1. The coagulated milk is tested for firmness.
2. The curd is cut with automated harps.
3 & 4. The whey is drained.
5. The curd is stirred and salted.
6 & 7. The curd is packed into cheese molds.
8. The press is set to 40 lbs overnight.
