Because Thunder Bay has a high percentage of individuals requiring specialty diets due to both food intolerance and health conditions, we began by specializing in this area. I’ve been pretty sparse on the social media posts lately, and that is because my focus has gone entirely into wedding season! It has been a blur of beautiful brides, a lot of hard work, and a fabulous staff to work with. Before we officially kicked off wedding season, I had the pleasure of catering for Lac Des Mille Lacs First Nation elders’ gathering at Lac Des Milles Lac. What a beautiful space and the weather wasn’t so shabby either, for a little post feast relaxation by the water.

What a lovely weekend of French cuisine! Here are some photo highlights of my recent classes. My French Canadian mother is pleased that I’ve finally incorporated her split pea soup recipe into the menu. Pas de problem maman:)
Making a delicious Jamaican curried goat stew with the fantastic crew of Cooking for Cred students (And don’t worry! Apparently this donated meat goat was not a cute and friendly little guy that could be at a farm or petting zoo, but rather a grumpy and kind of mean one. Perfect for a stew 😂) Will be enjoyed tonight at the Elder and Seniors dinner!

So, this is a cool addition to senior elementary program at Thunder Bay! The Got Skillz skilled trade competition had grade 8 students going from one trade station to another to compete, practice a trade and hopefully get inspired and fine a trade they love. I was honoured to be the “guest chef” in the culinary department and get those kids baking up a storm while we talked about the science and art of baking. 💪
It’s a chilly chili day:) I like to elevate a work meeting on a cold day to a chili bar fiesta!

What a wonderful evening with the Growing Project gala and beef auction! I was tasked with cooking prime rib sourced directly from the farmers, and was honoured to take part in this great fundraiser for the Canadian Foodgrains Bank. Also, thank you to the good folks at O'Conner Community Centre for providing a beautiful space and being so easy to work with:)
