Prior to opening Whisk Matcha Cafe, I’ve never been a barista; even til today I still don’t know how to properly make coffee because the coffee machine we have right now is fully automatic. I learnt the basics of latte art just by watching YouTube videos and a lot of practice. I think it’s cute, fun and challenging, while hopefully elevating your matcha drinking experience?

I know soymilk does not texturize as well as dairy milk, and matcha doesn’t contain oil like coffee making it harder to keep the pattern steady, but it doesn’t hurt to try right 🥰

If you missed our IG stories, we got a new toy - Cuzen matcha maker! It automatically grinds Tencha and whisk it into a matcha shot! If you’re curious about how it works, we have it at our cafe so you can see it running in action! $5 matcha shot is about 4oz, room temp, straight up, using 2g of organic UME tencha from Nakanishi san’s tea farm.

I gave Cuzen maker a rating of 7/10 because:

1. The fineness (smoothness or matcha particle size) is not very close to finely ground matcha powder. You can still taste a bit of graininess.
2. It takes 3 minutes to pull a 2g shot. Quite long for me but it frees up hands so you can do other things.
3. The matcha shot has a freshly ground matcha aroma of which I like!!

We brought in 🍂hōjicha powder🍂 back in 2018 and it’s been growing so much over the years! Do you know that despite of its brown color and nutty taste, hōjicha is still a type of GREEN tea?

Sometimes people get confused why it’s still green tea but the color is not green. Tea type is defined by the very first step of processing for raw tea materials - oxidation level. As long as the freshly picked leaves are immediately processed and oxidation is stopped by either steaming or pan-firing; the heat from steaming or firing will “kill” the enzymes in the leaves, and those enzymes will no longer react with oxygen in the air sealing many valuable nutrients in the tealeaves.

Hōjicha is extremely low in caffeine comparing to regular teas, so it’s great for all-day enjoyment! We have hōjicha looseleaf tea to be enjoyed on its own, or a variety of hōjicha oatmilk lattes for a treat!

1. A different matcha blend
Since we’re a matcha specialty shop, we have so many different varieties of matcha. This particular one is from Jōyō 城陽, Kyoto Prefecture, and cultivar is predominantly Yabukita 藪北cultivar. Yabukita cultivar possesses a stronger, earthier flavor profile, and closer to the “matcha-y” taste that many people associate with matcha sweets such as matcha Kitkat/Pocky.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
While most people in Vancouver love smooth & sweeter tasting matcha, there are also quite a few customers enjoy stronger & earthier matcha, yet not overly bitter; so we created this specialty drink 2 years ago and it’s been very well loved by fellow matchaholics~

2. Housemade Black Sugar Syrup
We use organic dark brown sugar using 2:1 ratio to slow cook the syrup in house to perfection. It can’t be too runny nor too thick - should be just syrupy enough. It adds a nice molasses/dates flavor without being overly sweet. We finish it off with some organic molasses drizzle. Molasses also has numerous health benefits - it’s rich in antioxidants, iron, calcium and Vitamin B6!

Starting today there will be no extra charge for subbing soymilk with oatmilk for matcha! Default pairing is still soymilk (we don’t have dairy here and soymilk is organic too), but we always ask for your mylk preference. Hojicha and coffee default are always oatmilk 🫶🏻. There’s a small upcharge for some of the 16oz iced drinks now as we use way more matcha powder and mylk for 16oz iced drinks, but most of them remain unchanged in size and prices.

This drink was created and introduced in the summer of 2020 as part of an iced drink challenge. It was a seasonal item as we simply didn’t have enough interest for it in the winter. Then 2022 the popularity grew and it became a permanent item on the menu all year round 🎉

Though our Hojicha Dark remains a top seller among all Hojicha drinks, Kuki-Hojicha & Hojicha Gold have been building a solid fan base at the cafe here. What are the differences between the two?

Kuki-hojicha is made with roasted tea stems. It’s super aromatic and nutty with a hint of smokiness. We pair it with the creamiest Earth Own Barista Oatmilk and very lightly sweetened, so each mouthful is bursting with flavors.

Hojicha Gold is made with a specialty blend, roast, CTC processed Hojicha looseleaf. It’s caramel-y, toasty and nutty. Hojicha is also low in caffeine making it a great drink all day long!

Is it Hojicha or Houjicha?

Occasionally I get asked which one is the correct one as this roasted tea is gaining more and more interests everyday.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Both are relatively correct. In hiragana, it’s spelt as ほうじちゃ, and that’s houjicha, the “ou”can be shorten as “ō”, making it hōjicha, or a simplified version as hojicha!

We have 4 different types of hōjicha:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ looseleaf hōjicha
This is served as straight up brewed tea (surprising lots of people enjoy the delicate sweet flavor).
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
2️⃣ CTC processed and golden roasted hōjicha
We skillfully brew this one into a super concentrate to extract its nutty and caramel flavor profile and as a base for Hōjicha Gold Latte!
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3️⃣ Kuki-hōjicha
Kuki (茎) means stems. It’s light roasted stems for a super aromatic and nutty brew, with a bit of smokiness to it. We use a different brew method to make a liquid concentrate for this one, and use it in our Kuki-cha oatmilk misto.

4️⃣ Hōjicha Dark (powder)
The last but not the least, we have the MOST popular, dark roasted, organic hōjicha powder! It has a chocolatey and roasty flavor profile, super smooth with no overpowering smokiness.

One of the most beautiful villages in Japan, Hoshino Mura is located in Fukuoka prefecture, southern part of Japan. We had the most magical stays during our tea sourcing trip back in 2018. At night, tea fields were blanketed under starry sky and hugged by foggy mountains. Isn’t that magical?

The matcha we use in this HCF drink was grown & processed right in the heart of Hoshino mura; first harvest as always (ceremonial grade), and stoneground to perfection. Thanks to its Hiire (火入れ) processing method that’s unique to this region, this matcha powder carries a seaweedy & toasty flavor profile comparing to our regular Uji matcha. We add a dust of Kinako (soybean powder) to complement the toastiness.
