I try not to pick favourites so don’t tell our other hash breakfasts that this new one is my favourite! Peppers, pinto beans, zucchini and onions roasted in a rich molé sauce. Topped with poached eggs, feta, pickled red onions and a creamy cilantro lime sauce. All on 2 corn tortillas.
