the volcanic soils are perfect for cultivating Yellow icatu, yellow catuaí, and red catuai varieties, which thrive here and constitute the majority of the farm’s yields—brazil’s finest coffee beans! after harvest, coffee cherries are transported to the são silvestre farm processing facility. selection machines analyze and sort cherries based on density and color.

ripe cherries undergo fermentation in open-air tanks at ambient temperature (around 23 degrees celsius) for 84 hours. once the coffee mass reaches the right temperature (approximately 35 degrees celsius), it is removed from the tanks. the cherries are then transported to raised beds for slow drying (about 30 days), promoting greater uniformity in the coffee beans.

we have selected a very sweet, low-acid coffee from brazil as well as a washed coffee from ethiopia.
nougat, chocolate, intense vanilla, honey and blood orange come together and immerse us in the christmas spirit.
we hope it gets you through the dark and cold days of winter.
