☀️We have just received some new wines from made 100km west from Copenhagen.

2 cuvées borth on 100% Solaris, spontaneously fermented, aged on the lees on steel tank and bottled without filtration.

🍇Cuvée K has no sulfites added, full bodied and complex.
🍇Sommersal got only 10mg/l at the bottling more slim and classic Solaris-like on the nose and palate.

☀️We have also received new cider from Århus, by :

🍎DRUNKEN MONOLOGUES:
This bottle has a lot of structure. Lots of depth. Complex without being complicated.

🍎I GOT ALL DRESSED UP FOR NOTHING:
Reminds of an energetic rosé pét-nat. Rhubarb, green strawberry, hip rose, red apple and grapefruit.

We also have a reffil of 35km north of CPH
Vexebo White and Vexebo Orange (2 weeks skin-contact).

🍶Strictly pure sake Junmaishu from Japan and also Modern Korean Sool made in Copenhagen without additives.

We introduced unpasteurized sake, unfiltered, undiluted or made from organically grown rice.

🌾 Few weeks ago Budō was honored to have the visit of from accompanied by .tsukiji :-)

🇯🇵In october 2024, we will have an tasting pop-up event in where you’ll be able to taste true sake for 2 days. We’ll update more details soon. Stay tuned! 🔥

And try the modern sool drink made in🇩🇰 by based in Copenhagen who produces modern Korean sool - rice based and naturally fermented alcohol. It is playful, rich and prickly on the tongue.

Delicious flavours of breadcrust, dry fruits and white flowers, fresh and light. The colour is pale straw, the perlage is fine and persistent, This wine is perfect for aperitifs, starters and fish dishes.

🍾Sono Bella in Rosa 2022 - 11,5% - Rosé Frizzante
🍇Pinot Bianco, Verdiso and Merlot Blend “sui lieviti”
Delicate floral notes, a delicate nose and well balanced, make for an incredibly easy drinking wine. The colour is pale pink, the perlage fine and persistent, This wine is perfect for aperitifs, starters, pasta dishes, pizza and charcuterie.
