Coffee holds a special part in Singapore's history and culture. In the late 18th century, with the wave of the incoming flow of immigrants from Europe and Asia the cultural mix created a new hype over coffee. Locally cultivated Arabica variety became more popular than the strong, bitter robusta beans. The new immigrants did not have the access to traditional brewing appliances and they started to use sock filters, This filtering process involves coating the inside of a flannel “sock” with ground coffee beans, placing it over a coffee cup, pouring in some hot water and allowing it to filter through. The beans coat the flannel material, allowing the water to steep and absorb the coffee flavor. Finally, adding sugar and evaporated milk completes the process and the result is a thick, sweet coffee, locals named it the Kopi.
