Maintaining these high standards and delivering great coffee to our customers every day is very important to us.
The SCA scale evaluates coffee on a 100-point system, considering factors like aroma, flavour, aftertaste, acidity, body, balance, sweetness, uniformity, clean cup, and overall impression.
Coffees scoring 80 points or above are classified as “specialty,” meaning you’re getting the best of the best coffee beans.

We’ve heard it all. “Can I put my new bag of whole beans or ground coffee in the fridge?” Well, we appreciate the creativity, but let’s set the record straight.
Here’s the scoop on coffee storage:
Freshly Brewed Coffee: Refrigerating your brewed coffee in an airtight container can keep it fresh for up to 24 hours. Perfect for enjoying iced coffee later!
Whole Beans and Ground Coffee: The fridge isn’t the best place for your precious beans or grounds. Coffee can absorb moisture and odors from the fridge, leading to a less than ideal flavor. Store them in a cool, dark, and dry place in an airtight container to maintain their quality.
Cold Brew: Cold brew coffee thrives in the fridge and can stay fresh for up to a week!

Bale Mountain ⛰️
This months subscription coffee is produced by Israel Degfa of the Solena Washing Station.
Varietal: Heirloom
Processing: Anaerobic Fermentation
Tasting Notes: Watermelon, blueberry muffin, honeydew melon.
Bale Mountain farm employs 350 staff at the Dry Mill and nearby Solena Washing Station.
The anaerobic fermentation in this lot highlights the acidity and fruit notes usually found in Bale Mountain coffees.
Local farmers employ traditional cultivation methods, often relying on ancient heirloom varieties adapted to the area's microclimates.

Flavio grows Caturra and Bourbon varietals using traditional washed processing methods. His journey began in 2002 when he migrated to San Ignacio province and purchased land in the remote village of El Diamante. Despite challenges like coffee leaf rust, Flavio persevered, maintaining a focus on sustainability and quality.
Today, his farm thrives with intercropped coffee alongside yuca, beans, peas, and pineapples, ensuring a harmonious balance between productivity and environmental operations.
