This week has seen the annual battle with the heat. This cake was supposed to have a more defined marble effect in the icing but after several attempts due to the icing literally slipping off the cake, this was all I could produce. Luckily, I have a very understanding friend. Thank you 😩

Cake decorating lesson with a 12 year old who wanted to make her sister’s 18th birthday Mama Mia themed cake. She made the cake and after 2 sessions of 2 hours to ganache the sponge and 3 hours to decorate, Alice did an amazing job! Thinking of doing similar lessons for Christmas cakes….

It’s always a challenge to manage customer’s expectations. Replicating from photos is difficult due to lighting and availability of different elements internationally. The sugarpaste rainbow was requested instead of the acrylic one in the 2nd photo.

Another challenge: celebrating a milestone birthday for a retired sign writer. Research was needed to find out what a mahl stick looked like and then working out how to make it. Apparently he was moved to tears by the finished cake. ☺️
