It's Easter next week and this year I'm proposing to you all, a symbolic italian Easter dish, to be enjoyed as an amazing appetizer for Easter day or as a savory quiche for your picnics on Monday bank holiday or whenever you like. 🐣 🇮🇹🌿

It's called "Torta Pasqualina".
It's a pastry cake stuffed with spinach, ricotta, parmesan, nutmeg and eggs. 🥚🥬🐥

Born in Liguria, is also present on the tables of many other Italian regions, including Puglia, of course.

•

It's usually eaten as an appetizer on Easter day, but is also very popular during "Pasquetta", a festive the day after Easter.
At Pasquetta, everyone enjoys making barbecues and the Torta Pasqualina is part of dishes brought outdoors to share with friends. 🌼🌞🏕️🏖️🏵️

It's suitable for freezing (if you'd like to have it for the weekend). Just let me know in advance and I'll give you some tips to enjoy it always fresh.

When I was in Buenos Aires, I spent a nice evening organized by a lovely lady Maria Teresa, "Presidenta del Centro de jubilados y pensiondos de Gerli" ( President of the retirement centre of Gerli) with the aim of reuniting my husband's cousins ​​who had not seen each other since they were children.

I had the pleasure of cooking pizzas in the old oven which is now used for special occasions. We made pizzas with typical Argentine flavors: jamón y morrones, muzzarella and fugazzeta rellena.

It was special to be able to share that moment with Maria Teresa and her son Diego, full of love and family stories.
Many thanks to both for having us. 🙏❤️

For this week and throughout April, to remind this beautiful journey:
• "Jamón y morrones" (ham, red peppers, green olives and mozzarella;
•"Muzzarella" (Margherita with double mozzarella), are available on the menu to preorder today by 8pm.

Also, this week, it's Carnival in Italy and to celebrate it, with all the orders placed, I'll be giving away my home-made "Chiacchiere di Carnevale", a traditional dessert from Apulia that is enjoyed during this festive period, when kids dress up as their favourite characters and wear colourful masks.🎭🎭🎭

In Italy today is the feast of the Immaculate Conception and traditionally “ Pittole and Pucce" are eaten in almost every house in my home town, Salento.

Last year, I wanted to celebrate it making "le Pittole" for my family and giving some to my lovely neighbours.
This year instead, I made "le pucce con le olive" (olive bread) and we had them for lunch today, filled with one of the most popular flavour in my home town: tuna, tomatoes, capers and rocket. 😋

In this special occasions, the typical flavours of dishes from my motherland Puglia make me think how lucky I am to be born there and the importance to keep traditions always alive to give the opportunity to be known and passed to the new generations.❤️🏠
