What's in the shop?
One highlight is our traditional from Tuscany, made with pasteurised sheep's milk and animal rennet.
Although the cheese is only 5 months old it has a strong flavour and crumbly texture you might expect from an older cheese. Pair it with honey, thyme and our coppa. It's great!
This spreadable cream goes well on toast but can also be added to savoury dishes bringing richness and a sweet yet earthy delicious flavour.

You will receive six juicy sausages made here at Source from a male wild boar from the Forest of Dean.
If you haven't tried it before, wild boar has a unique flavour that is a sort of mix between beef and pork. Add plenty of fat when cooking to retain the succulent texture!

Seville oranges are here... 🍊
Now is the time for the bitter oranges from Seville, used in making orange marmalade!
Look for oranges as recipes call for pith and skin which often retain a lot of chemicals used in conventional orange groves.

The wild boar is an incredible animal and they are in plentiful supply in many of our woodlands and forests right here in the UK.

In some areas such as the Forest of Dean, they are causing issues with over-grazing as they have no, natural predators. We buy all our boar from professional stalkers who kill selected animals as part of a controlled cull.
The meat is lean and strong tasting - like a combination of pork and beef. Treat it in the same way you would pork but be aware that it has very little fat so either reduce your cooking time or add some extra fat to your dish.
If you need some inspiration on how to cook it, look no further than northern Italy 🇮🇹 for some delicious and simple recipes which bring out the best in these wild animals!

As we move closer to spring we also move closer to the when we rely heavily on imports which presents a range of issues.
With frosts in Italy and Spain causing some products to grow very slowly or not at all. This forces the prices we pay even higher meaning we're seeing some record costs for such things as broccoli, spinach and courgettes. 🥦
This drives home the importance of eating seasonally and supporting a wide range of independent food shops to ensure we have a good range of food available from a variety of sources.
I believe it is more important than ever to support your local food shops as these are the toughest times I have ever seen!

Each whole fish is perfect for two or three when cooked on the bone. I also have some portion-sized fillets from a larger fish which are perfect for steaming or pan-frying.
I think fresh fish is lovely without additional flavours but a little lemon, lime, ginger, dill or fennel would make a great fish even greater!

All our bacon comes from Sandridge Farm near Chippenham in Wiltshire, the pigs are reared and slaughtered on the farm.
The bacon is dry-cured, meaning it isn't packed full of water, reducing shrinkage and increasing the flavour. This week, we have a whopping 40% discount on all four types (back, streaky, smoked and green (unsmoked).🥓

is a very seasonal root related to the dandelion. It's sometimes called the oyster plant as it has a similar taste.
Scrub or peel the root and poach it in milk and black pepper and serve it either mashed or sliced like a carrot. It goes really well with slow-cooked beef, venison and game. Another root veg on top form this week is organic leeks (pair them with for a January treat).
Organic swede, sweet parsnips & carrots are also very good at the moment.

This week we’re using offal from our as well as some minced free-range pork and a perfect balance of seasoning.
Packed in pairs, these seasonal treats are perfect with cabbage 🥬 and mash. Simply brown them in a pan then finish them in the oven at 180ºc for 20 mins.

Produced in the in Italy since the 12th century this pungent semi-soft cheese is really versatile.
Use it in a gratin-style baked dish or make a deluxe sauce with macaroni, leeks, grilled chicken or cauliflower.
