We know how much you guys have loved our wine fermentation specials in the past, so we thought it was time to get another one involved. This is an incredible coffee from Guji, Ethiopia - characterised by high altitudes, rich soils, and complex flavour profiles.
Let's run you through how this coffee is processed. Once the coffee cherries are picked, they are placed in sealed tanks where they undergo anaerobic fermentation, a process inspired by winemaking techniques. Natural sugars in the cherries are broken down, developing complex flavour compounds, and enhancing the coffee's inherent fruity notes. After fermentation, the cherries are dried on raised African beds for 15 - 18 days, allowing them to lose moisture, whilst retaining the flavour profiles.
With notes of jasmine, pineapple and apricot.

Ever wondered what 'cupping' is? It's a method used to evaluate and compare the aroma and flavour profiles of different coffees. It helps to assess the quality, as well as characteristics.
After the coarsely ground coffee has steeped for around 4 minutes, a crust of grounds forms on the surface. We then 'break the crust' with a spoon, which releases delicious aromatic compounds. Then, we slurp! This helps to aerate the coffee and helps us to distinguish the unique flavour notes for each coffee.
Then, we score the coffee based on aroma, flavour, aftertaste, acidity, body, blance, sweetness, uniformity, and clean cup.
Cupping is used at all steps in the industry - from coffee growers, to roasters and buyers to ensure its quality and identify if there are any defects.
At Wogan Coffee, this is a daily occurrence, and if you hang around long enough in our Brew Bar, you will almost definitely see us having a go!
