//QUICK AND EASY MINESTRONE SOUP//ā£ā£

I fell in love with minestrone soup when I tasted the legendary Olive Gardenās for the first time! This soup has become a staple for me, it is filled to the brim with veggies and deliciousness!!

Soups are a lunch time favourite of mine (multiple times a week when Iām at workš³), I find them so satisfying and filling.
ā£ā£
This recipe is easily changed as well - you can add and change the vegetables to fit your taste or even add in pasta (Iāve added 1/4 cup of barley this time!)

š±Minestrone Soup recipe:ā£ā£
ā£ā£
-2 tbsp olive oilā£ā£
-2 carrots, halved and dicedā£ā£
-1/2 red onion, dicedā£ā£
-2 celery stalks, slicedā£ā£
-1/2 cup frozen peasā£ā£
-2 cloves garlic ā£ā£
-4 cups vegetable broth ā£ā£
-1 can chopped tomatoesā£ā£
-1 can kidney beansā£ā£
-2 tsp dried mixed herbsā£ā£
-1 bay leafā£ā£
-2 handfuls of spinachā£ā£
ā£ā£
1ļøā£Heat olive oil on medium heat, add carrots, onion, and celery. Cook until tender (5 minutes).ā£ā£
2ļøā£Add in garlic, give it a big stir. Add in veg broth, tomatoes, frozen peas and spices. Bring to a boil.ā£ā£
3ļøā£Turn down to a low simmer, add in beans. Cook for 15 minutes (30 mins if you add barley).
4ļøā£Stir in spinach, cook for further 5 minutes.ā£ā£

Iāve found the last two weeks of April a bit ungrounding and demotivating for me. So I am welcoming May with open arms and going to use this daily checklist to reset and get back into the simple habits.
I will do as many as possible daily but we all know life gets in the way sometimes so daily(ish) seems more achievable and with less disappointment attached to it.
It really is the small daily habits that create our lifeāØāØāØ

THE QUICKEST & EASIEST WAY TO MEAL PREPāØ
1. Roast a tray of veg, my go-toās are sweet potato, bell peppers, red onion and broccoli but you can use anything!
Drizzle with olive oil, salt & pepper and cook in the oven for 30 minutes at 200C.
2. Cook quinoa in veg stock (makes it even yummier) for about 15 minutes.
3. Choose and cook your protein of choice - chickpeas, tempeh, chicken, salmon etc.
4. Your āadd onsā (tahini dressing, hummus, olives, greens, nuts/seeds) these are really easy ways to make your meals even more delicious!
MEAL IDEAS:
- you can use all the above to make a Buddha bowl like I did
- use the quinoa as a stir fry base
- use the veg to have with eggs for breakfast
- use veg and quinoa as salad topping or add salsa and avocado to make burritos!
We all live such busy lives so this 30 minute meal prep is a blessing for keeping us nourished during the working week!

WHY EAT SEASONALLY?āØ
Eating local seasonal fruit and veg makes for tastier, fresher and more nutritious produce!
1. Produce that hasnāt traveled across the globe normally means less pesticides, waxes and preservatives. These are used to keep the veg fresher for longer, but once veg is picked the nutritional content starts to decrease.
2. Mother Nature knows best! She supplies us with all the right nutrients when we need it. For example we are provided with more hydrating and phytonutrient rich fruits to protect against sun damage and provide hydration during the long hot summer days.
3. Normally the cheaper option, it all comes down to supply and demand!

Taking hot lemon water up a notch!ššÆš¦
Not only is it immune supporting, but it will also support digestion, skin health and liver detoxification!
Add peeled lemon & ginger,
local honey,
pink Himalayan salt (rich in natural electrolytes),
a cup of water
Blend until smooth, pour into ice cube tray and freeze!
