Chef Graham has created the ultimate one pot wonder! Perfect for a speedy midweek scrumptious meal, or a weekend dish for you to sit back & relax, let the cooking do the talking😎
- East Coast Cured Nduja & Pork Belly Hot Pot -
Serves 2 with leftovers
Ingredients
1 400g tin of cooked chickpeas, rinsed
1 400ml tin of chopped tomatoes
1 400ml tin of tap water
500g diced pork belly
150g East Cost Cured Nduja, diced (sobresada/cooking chorizo will also work)
1 white onion, sliced
1 carrot, sliced
1 stick of celery, sliced
2 garlic cloves, crushed
4 bay leaves
1 teaspoon chili flakes
1 teaspoon fennel seeds
1 handful of chopped parsley
1 sq**rt of tomato puree
25ml good quality red wine vinegar
1 teaspoon sugar

Serves 6.

For the Posset: 1.2l double cream / 275g caster sugar / 150ml lemon juice / Zest of 5 lemons / 200g rapsberries.

For the Brownie: 175g butter / 150 dark chocolate / 3 medium eggs / 300g caster sugar / 75g plain flour / 40g cocoa powder.

For the Meringue Drops: 4 egg whites / pinch of salt / half a lemon / 220g caster sugar.
