Did anyone get around to making this? What did you think? King prawn and avocado stack, amazingly good and so easy to make using an empty tin can opened at both ends (a clean one, of course 😉)

Ingredients (pic serves 2)
12 cooked king prawns, 1 avocado cut into slices, 2 tsp finely chopped red onion, 1/2 tsp chopped Chives, 1/4 cup finely chopped cucumber. For the vinegarette - 1/4 cup olive oil, 2 tbsp red wine vinegar, 1 tbsp lemon juice, 1/2 tsp sugar, 1 tsp dijon mustard, salt and pepper to taste
Instructions

Mix all the vinegarette ingredients together in a bowl and place to one side. Using a clean empty tin can, opened at both ends, place can on a side plate. Starting with the avocado, place a layer at the bottom, then a little cucumber, red onion, king prawns, and a drizzle of vinegarette. Repeat this again, making sure a layer of king prawns with a drizzle of vinegarette is on top. Place in the fridge for 10 mins. Take out and carefully slide the can off, being careful to keep the stack in place. Finish off with a drizzle of vinegarette around the plate and a sprinkle of fresh Chives.

Breakfast recipe - Scrambled eggs, feta & spring (green) onion. Takes no time at all to make. A hit all round. Best served immediately. Enjoy guys 😉

Ingredients serves 1
1 egg, 1 egg whites, 2 tbsp skimmed milk, 1 tbsp spring (green) onion chopped, 2 x 1 calorie spray oil, 30g (1oz) feta crumbled, 1/2 tsp fresh chives chopped, salt and pepper

Instructions
Whisk together the whole egg, egg whites, milk, chives, salt, pepper, and spring onion. Heat the pan with the spray oil on medium heat. Pour in the egg mixture and reduce to a low heat stirring continuously with a spatula. Once cooked to your liking transfer to a serving dish, crumbling feta and extra chives and spring onion if you prefer.

Made salmon and avocado skewers. Grilled salmon first in a little olive oil. Allowed to cool slightly, cut into chunks, and skewered with avocado and cucumber. Watered down some cream cheese mixed with lemon, black pepper, and either milk or water, then drizzled over. You don't have to skewer if you dont want to. Took no time at all. Try it 👍

Lime ricotta chicken & avocado salad. I'm not a fan of basic red tomatoes. I find them to taste of nothing. I know organic is more expensive, but when it comes to tomatoes, it's well worth it. Try these yellow tomatoes, amazing flavour. Recipe below

Serves 2
Ingredients
1/2 cup shredded cooked chicken, half a lime squeezed, 3-4 tbsp ricotta cheese, 10 slices golden yellow tomatoes, 1 organic red tomato sliced, half a small avocado sliced, cress for garnish, drizzle olive oil

Instructions
Mix together the shredded cooked chicken, ricotta, a drizzle of olive oil, a pinch of sea salt, and the lime juice. Add lime zest for a more intense flavour if you prefer. Put to one side and arrange the golden yellow tomatoes on a serving dish (pictured). Add the chicken ricotta mix, red tomato slices, avocado, a drizzle of olive oil, and finish off with a garnish of cress.

Todays recipe - Low carb shirataki pasta carbonara. This pasta is hard to get used to as it's a little more al-dente than it should be. However, mixed with the sauce, it's lovely. Give it a try.

Dinner recipe - cabbage ground beef & cauliflower rice wraps. Blanch cabbage leaves until soft and remove the stalk before wrapping. I always make a batch as they are perfect for freezing. Delicious hot or cold. Use uncooked cauliflower rice instead of rice for a lower carb option.
Ingredients
15oz (450g) ground beef (mince) uncooked, 1 large onion chopped, 1 1/2 cups basmati rice uncooked or uncooked cauliflower rice uncooked, 7oz (200g) tin chopped tomatoes, salt, pepper, 1 cup parsley chopped, 1 1/2 tsp ground cumin, 1 1/2 tsp ground cinnamon, 1 heaped tbsp dried mint, 1 chicken stock cube, 6 tbsp olive oil, grape vine leaves in brine or cabbage leaves, blanched and stalk removed

Instructions
Mix all ingredients in a large bowl until combined apart from the leaves. Place 1 tbsp of the mixture onto the middle of the vine leave. Make sure the vine leaf has no splits. If this is the case, double up on vine leaves per wrap. Fold the bottom of the vine leaf up over the mixture, then fold in the sides over the mixture and roll tight. Pack tightly together in the pan as pictured. Continue doing this until all dolmades fill one layer. Place a plate inside the pan to fit inside the pan but cover all the wraps to keep them in place. Dissolve a chicken cube in boiling water and pour to cover half the wraps. Put them over a low heat continually, checking until the stock just about dissolves. Leave to rest and serve.

To all my bariatric buddies beware of joining bariatric 2024 groups, they are scammers. They have created three bariatric 2024 groups selling books that are from other authors passing them off as there own. I've contacted the authors individually to make them aware of this. And feel for all the members as they won't just pay the fee they are charging. I'm scared they are gonna wipe there bank account as names of profiles do not match profile pictures. I'm getting hounded on messenger and tried to join these groups and blocked me straight away yet they are taking over my recipes I've created with hard work, on my posts. I need to make all members aware of this as I've done major research on this as its a complete scam. Facebook have also been told. If you see any names from list below report them to admin in your groups. I blocked these over the last 3 days.

Serves 2
Ingredients
1 calorie spray oil, 1/4 cup cooked boneless ham diced, 1/2 cup grated cheddar cheese, 1 spring onion (green onion) chopped, 2 eggs, 1/2 cup heavy (double) cream or whole milk, 1 tbsp grated parmesan cheese, 1/4 tsp garlic powder, 1/8 tsp pepper, 1/8 tsp mustard powder, 1/8 tsp onion powder, spring onion chopped for garnish

Instructions
Preheat the oven to 350F. Spray two small ramekins with 1 calorie oil spray. Divide the diced ham evenly into the ramekins and sprinkle with spring onions. Add half of the grated cheddar. In a bowl, whisk together the eggs, heavy cream (or milk), parmesan cheese, garlic powder, pepper, mustard, and onion powder. Pour the egg mixture evenly into the ramekins. Top with the remaining grated cheddar. Place on a baking tray and bake for 20 minutes or until set. Remove from the oven, cool for 5 minutes, then serve.

Creamed spinach mini stuffed mushrooms
Breakfast or lunch recipe
Serves 4
Ingredients
12 small to medium size mushrooms cleaned and stalk removed, 1 handful fresh spinach finely chopped, 3 tbsp creamed cheese, 1 tsp garlic powder, 1 tbsp grated parmesan, 2 tbsp dried pork rind crumbs, 1 tbsp shredded mozzarella, salt & pepper to taste, 1/2 tsp olive oil

Instructions
Preheat the oven 180/350 degrees/gasmark 5. In a bowl, mix the chopped spinach, creamed cheese, garlic powder, grated parmesan, and a pinch of salt & pepper thoroughly and place to one side. On a baking tray, brush the mushroom caps with olive oil. Add a little of the mixture to each one and add a sprinkle of mozzarella on top. Finish off with dried pork rind crumbs. Bake for 15 mins in the centre of the oven or until golden brown.

Ingredients
1/2 cup marinara sauce or pizza sauce (low carb), 1.5 cups mozzarella cheese, 1/2 cup browned sausage (or ground beef), 1 tbsp green pepper, chopped, 16 slices of pepperoni, 1/4 tsp Italian seasoning 

Instructions
Preheat oven to 400°F. In a 10.25-inch skillet (pan) on the stove (hob), heat the 1/2 cup pizza sauce over medium heat until bubbling, about 2-3 minutes. Sprinkle a generous amount of shredded mozzarella cheese on top of the sauce, keeping back about 1/4 cups for later. Layer the toppings on the cheese and sprinkle the remaining 1/4 cup of mozzarella cheese over the top. Sprinkle some Italian seasoning evenly over the pizza. Bake for approximately 5 to 10 minutes. The mozzarella cheese should begin to bubble and turn golden brown. Then, carefully remove it from the oven. Allow it to cool for a few minutes before serving

I am getting private messages from all you liquid stagers saying you're feeling upset because your stomach is rumbling at this stage.

Why is that I wonder? 🤔
You should not be feeling at all hungry straight after surgery!!!!

I asked this question : "Are you scrolling through recipes and watching food channels?"
Every single person said YES!

Why torture yourself at this stage. Why look at food when you know you can't have it at this stage? Of course, you're going to feel hungry doing this, resulting in feeling deprived with feelings of sadness and frustration.
STOP NOW ✋️ ✋️ ✋️ ✋️

I was exactly the same 3 days into Liquids, and I knew this was the reason. Instead, I downloaded clothing apps, added all the clothes I wanted to wear at Target, and 2 years on I have bought quite a lot. Do you know how good that feels? From taking action at the very beginning of my surgery to now wearing them.

Trust me, guys, it works 💪
Don't torture yourself. Make this journey as easy as possible for your own sake.

Made a steak, mushroom & asparagus cauliflower risotto for dinner. So quick & easy to do.
What you need - quick frying steak, mushrooms sliced, asparagus roughly chopped, 1/4 tsp minced garlic, a little butter, 1/4 tsp onion powder, 1/4 tsp garlic herb seasoning, 1 bag Green giant cauliflower risotto.

I fried the steak in butter, rested, and then sliced. Returned to the pan and added all seasoning and veg. Sautéed until veggies softened slightly, around 7 minutes. Meanwhile, I steamed the cauliflower risotto in the microwave and served together. Delicious 😋

Made a one pan taco bowl for the family this evening. You will need ground beef (mince), onion, and taco seasoning.
For the toppings you will need, cheese, lettuce, tomatoes, avocado, jalapeños (optional), green onion, cilantro (corriander), and sour cream.

Preheat oven 350F. Brown the beef and chopped onions in a pan suitable for the oven on a medium-high until cooked through. Add in the taco seasoning, 2/3 cup of grated cheese, and thoroughly mix through. Place in the oven for 5 mins until cheese has melted. Top with various toppings listed above. Serve with lettuce shells. Yum yum enjoy. Ash x

Made a simple chicken & Parmesan Alfredo this evening. I sprayed the chicken breasts all over with olive oil spray coated in a garlic & herb seasoning and fried on medium-high heat until thoroughly cooked through. I added a jar of low-carb mushroom Alfredo sauce and added 1/2 cup of grated parmesan. I reduced the heat to a simmer for 10 mins. Served over steamed broccoli with an additional sprinkling of parmesan. Give it a try. Delicious 😋

Ingredients
1 tbsp olive oil, 2 large peppers prepared, 2 cups diced chicken thigh (skinless), 2 tbsp chopped onion, 2 tbsp salsa (low sugar), 1/4 cup sour cream, 4 tbsp grated cheddar cheese, 1/2 tsp chilli powder & cumin, cilantro (corriander) chopped.

Instructions
Preheat oven 350F. Cut pepper in half (long ways), deseed and drizzle with a little olive all over. Place in oven for 15 minutes.
Meanwhile, in a pan on medium-high heat, add 1 tbsp olive oil, diced chicken, onion, a pinch of salt and pepper and fry until chicken has thoroughly cooked through. Add the chilli, cumin, cheese and sour cream and salsa. Thoroughly mix through. Set aside.
Once peppers are done, carefully divide the chicken mixture into each pepper half. Sprinkle with a little more cheddar cheese and bake for a further 10 minutes. Enjoy with a sprinkle of cilantro and sour cream for dipping.
