This was an Iranian feast I cooked up today-
VEGAN ADAS POLO BA KADOO HALVAI
Spiced rice and lentils, with melting, unctuous caramelised onions and Barberries (the ingredient you didn’t quite get Sue and Gail), served with roasted butternut squash and dates, vegan mince with cinnamon and nutmeg, pistachios and pomegranate seeds.
And on the side Baba Ganoush, Tapenade(not Iranian but it went rather well) and Yoghurt…. Oh and flat bread.
Pretty blimmin yum if I say so myself!

Here in Glastonbury we like to observe the turning of the wheel, and this year almost more than ever, welcoming back the light. Today I am cooking up a Solstice feast to share with friends and after that we will make some prayers for the year to come, whilst burning anything that we have in our life that is no longer serving us….. could be a big cauldron of fire this year! Vegan Panforte. Most probably a million calories but, all things considered, every chewy, chocolatey, nutty, gingery, cherry mouthful is worth it and bearing in mind so far we have survived 2021, well deserved ♥️

I’m not entirely sure what convinced me that making two types of curry, a Tamarind and a Coriander chutney was a good idea on a blimmin’ Monday night…. but there we go!! Roast Potato Chaat and Pumpkin Biriyani…. all the recipes in this month’s edition of Food magazine this month. It may have been a bit of a mission but it was WELL worth it, and I won’t need to cook before Tai Chi tomorrow night…. or come to think of it Meditation on Wednesday night 😆😆😆

Vegan Hobnobs. Quick, easy and so delicious. Add melted chocolate on top too if you so desire, but I just fancied plain today. To serve, add a big mug of tea and a book 💚

Nice to have friends for lunch today. Carrot Lox with Garlic and Herb Cashew Cheese on Spelt Crackers, followed by Pulled Jackfruit, Cauliflower Cheese, Roasties, Broccoli, Gravy and Apple Sauce. Desert was Pear and Almond Crumble and Ice Cream but I forgot to take a picture of that! It’s always a pleasure cooking for others….. thinking of doing some Pop-Up Vegan Sunday Roasts this Autumn 🍂 🧑🏻🍳🍁🍄
Day 2 of Three Day Gravy….. make a Demi Glacé using yesterday’s stock. I will leave this to stand overnight now before passing through a sieve tomorrow 💚

Nearly the end of the week and fridge foraging produced a potato an onion and two corn on the cobs from my Riverford veg box last week, so…… Sweetcorn Chowder it was…… made creamy by a small pot of Soy Cream.
Delicious, homely and comforting 💚
For an early supper tonight I made a big bubbling pot of Ribolitta, with Cavalo Nero and Cannellini beans with Cheesy garlic bread because…… it’s……. BAKE OFF! Sooooo excited to meet the new contestants and simply fabulous that there’s a Vegan amongst them
Harrisa Aubergine, Pomegranate seeds, Cachumba salad, Coconut Yoghurt and a sprinkle of Sumac…. Quick, fresh, easy and delicious ❤️
I don’t buy much pre-prepared ready made food, but, I did try these tonight and I have to say that with a sweet chilli sauce to dip in, they were absolutely yummy 😋
