This is a reminder that nothing has to be perfect guys like people make out on socials โฆ this is chaos ๐ but we had fun!!!!!
Tbf the fact we did this in 10 mins at the end of our workout with just a couple outtakes Iโm impressed ๐
๐ Have a lovely dayyyyyyy ๐
๐ Stuffed Pepper Pumpkins ๐
A yearly tradition ๐
A well balanced family meal idea ahead of trick-or-treating ๐ป
You will need:
๐ธ4 colourful peppers
๐ธ500g beef mince (optional)
๐ธMedium red onion
๐ธTinned tomatoes
๐ธSmall courgette
๐ธ2 garlic cloves
๐ธSeason to your liking, I used (salt, pepper, chilli flakes, Worcestershire sauce)
๐ธTomato sauce for the base
๐ธCheddar cheese
๐ธ1 and a half cups of cooked Quinoa or mixed grains
๐น Cut the tops off the peppers (keeping the tops to one side) and remove the seeds and any white flesh from inside.
๐นUse a small sharp knife to carve spooky Halloween faces into the sides. Eat the off cuts as you go along ๐โจโจ
๐นHeat oil in the pan, and heat the oven to 200C/180C fan/gas 6.
๐นCook the chopped onion in the oil for 3 mins until starting to soften, then add the minced garlic, courgette (finely chopped or grated) and cook for another 5 mins, until the veggies are soft.
๐น Add your beef mince (optional) & cook until itโs no longer pink, season to taste!โจ
๐น Stir through the the mixed grains & tinned tomatoes, leave to simmer for a few mins, adding a splash of Worcestershire sauce ๐
๐น Taste test & add more salt/pepper if necessary! โจโจ๐น Fill each pepper with the mixture. Replace the lids, and put the peppers in a deep roasting tin with the carved faces facing upwards.
๐นCover with foil and bake for 35 minsโฆ. Take the tops off for the final 10 mins and add a sprinkling of cheddar cheese, leave the foil off for this final 10 mins until the cheese has melted & peppers have a little charred look ๐
๐นThe peppers should be soft and the filling piping hot.
๐น Warm through some tomato sauce in a pan to spread on the plate for the peppers to sit on top of ๐ ENJOY x

๐น 3-6 people in each session means you have the support of others around you, whilst still having that personal touch.
๐ธThe smaller groups means I can adapt each movement to suit each individual in the room & ensures you are safely executing the movements.

This is so easy to make I promise you can do this too!

Cut 8 tomatoes into quarters and place them on one tray
๐
Then cut 3 red bell peppers into quarters and place them on another tray, with 2 small onions cut into wedges & 6 cloves of garlic unpeeled.
๐
Drizzle olive oil over the veggies and give them a little shakey shake to ensure they are all slightly coated (1 tablespoon for each tray)
๐
Pop the tomato tray on the top rack of the oven and the pepper tray in the middle
๐
I didnโt set a timer for this as I cooked them until they had that charred look (more flavour ๐) but it was about 40 mins they were in there for!
๐
When the veggies are nearly done Sautรฉ some celery for extra goodness and then add the veggie broth! (1x vegetable stock cube to 400ml water) if you like your soup a little thicker then use less water.
๐
Allow to boil in a big pot over a medium/high heat & add in the garlic (obviously take the skins off them first)
๐
Add the roasted veggies to the pot, half teaspoon of paprika & add a pinch of chilli flakes for a little spice ๐ plus a little salt.
๐
Allow to simmer for 10 mins, then transfer to a blender, I blitzed mine in batches & seasoned to taste ๐
๐
I added a little basil to mine and served it with avo sourdough toast but itโs also extra delicious with a little slice of cheesy toast ๐ the best winter warmer!!!

Letโs have a little look into where it all began!
๐ฉท That first picture says ALOT ๐ if you know you knowโฆ. This is what I used to drag my gear in to Goals Sports centre when it all started ๐ honestly it was a nightmare ๐ I can whole heartedly say I started from the bottom and worked my way up!!!!

๐ฉทThe very last day of Anytime Fitness & my amazing time as a manager X I loved that place and the people in it x
๐ฉท Celebrating the beginning of Elate Fitness, with a practice class in my garden ๐
๐ฉท First class at Goals sports centreโฆ I started teaching just 2x classes a week, whilst working at Dance East Cafe x
๐ฉท I then moved to Ravenswood & Lockdown struck! There were some positives for me as I was able to train outside & this brought the community together x
๐ฉท Clients came to me rain, snow & shine ๐ซถ๐ป
๐ฉท I was then super lucky to have been approached about a unit that was a stones throw away from where I lived ๐
๐ฉท My true Elate Fitness vision started to come to light ๐ & I got the lease for our lovely little private unit!
๐ฉท I still have lots of work to do but things are progressing nicely ๐ค
๐ฉท I have welcomed back those amazing clients that have stuck with me through and through (you know who you are ๐ค) and welcomed new faces with open arms ๐ซ
๐ฉท I look back on my journey and I am so proud ๐ฅน from someone that lacks self belief, finds it difficult not to compare to others, is an over thinker, worries about the smallest things and worries about what people thinkโฆ.. I have come a long way!!!
