๐ŸŽƒ Stuffed Pepper Pumpkins ๐ŸŽƒ

A yearly tradition ๐Ÿ˜€

A well balanced family meal idea ahead of trick-or-treating ๐Ÿ‘ป

You will need:
๐Ÿ”ธ4 colourful peppers
๐Ÿ”ธ500g beef mince (optional)
๐Ÿ”ธMedium red onion
๐Ÿ”ธTinned tomatoes
๐Ÿ”ธSmall courgette
๐Ÿ”ธ2 garlic cloves
๐Ÿ”ธSeason to your liking, I used (salt, pepper, chilli flakes, Worcestershire sauce)
๐Ÿ”ธTomato sauce for the base
๐Ÿ”ธCheddar cheese
๐Ÿ”ธ1 and a half cups of cooked Quinoa or mixed grains

๐Ÿ”น Cut the tops off the peppers (keeping the tops to one side) and remove the seeds and any white flesh from inside.

๐Ÿ”นUse a small sharp knife to carve spooky Halloween faces into the sides. Eat the off cuts as you go along ๐Ÿ˜‚โ€จโ€จ
๐Ÿ”นHeat oil in the pan, and heat the oven to 200C/180C fan/gas 6.

๐Ÿ”นCook the chopped onion in the oil for 3 mins until starting to soften, then add the minced garlic, courgette (finely chopped or grated) and cook for another 5 mins, until the veggies are soft.

๐Ÿ”น Add your beef mince (optional) & cook until itโ€™s no longer pink, season to taste!โ€จ
๐Ÿ”น Stir through the the mixed grains & tinned tomatoes, leave to simmer for a few mins, adding a splash of Worcestershire sauce ๐Ÿ˜ƒ

๐Ÿ”น Taste test & add more salt/pepper if necessary! โ€จโ€จ๐Ÿ”น Fill each pepper with the mixture. Replace the lids, and put the peppers in a deep roasting tin with the carved faces facing upwards.

๐Ÿ”นCover with foil and bake for 35 minsโ€ฆ. Take the tops off for the final 10 mins and add a sprinkling of cheddar cheese, leave the foil off for this final 10 mins until the cheese has melted & peppers have a little charred look ๐Ÿ˜€

๐Ÿ”นThe peppers should be soft and the filling piping hot.

๐Ÿ”น Warm through some tomato sauce in a pan to spread on the plate for the peppers to sit on top of ๐ŸŽƒ ENJOY x

The NHS suggests these are the times we should aim for based on our ageโ€ฆ. But I think we are better than that ๐Ÿ’ช

A big warm hug in a bowl ๐Ÿซ‚

This is so easy to make I promise you can do this too!

๐Ÿ… Cut 8 tomatoes into quarters and place them on one tray

๐Ÿ… Then cut 3 red bell peppers into quarters and place them on another tray, with 2 small onions cut into wedges & 6 cloves of garlic unpeeled.

๐Ÿ… Drizzle olive oil over the veggies and give them a little shakey shake to ensure they are all slightly coated (1 tablespoon for each tray)

๐Ÿ… Pop the tomato tray on the top rack of the oven and the pepper tray in the middle

๐Ÿ… I didnโ€™t set a timer for this as I cooked them until they had that charred look (more flavour ๐Ÿ˜ƒ) but it was about 40 mins they were in there for!

๐Ÿ…When the veggies are nearly done Sautรฉ some celery for extra goodness and then add the veggie broth! (1x vegetable stock cube to 400ml water) if you like your soup a little thicker then use less water.

๐Ÿ… Allow to boil in a big pot over a medium/high heat & add in the garlic (obviously take the skins off them first)

๐Ÿ… Add the roasted veggies to the pot, half teaspoon of paprika & add a pinch of chilli flakes for a little spice ๐Ÿ™‚ plus a little salt.

๐Ÿ… Allow to simmer for 10 mins, then transfer to a blender, I blitzed mine in batches & seasoned to taste ๐Ÿ˜ƒ

๐Ÿ… I added a little basil to mine and served it with avo sourdough toast but itโ€™s also extra delicious with a little slice of cheesy toast ๐Ÿ˜ the best winter warmer!!!

Letโ€™s have a little look into where it all began!

๐Ÿฉท That first picture says ALOT ๐Ÿ˜‚ if you know you knowโ€ฆ. This is what I used to drag my gear in to Goals Sports centre when it all started ๐Ÿ˜‚ honestly it was a nightmare ๐Ÿ˜‚ I can whole heartedly say I started from the bottom and worked my way up!!!!

Started from the bottomโ€ฆ. Now weโ€™re here ๐Ÿ˜œ

๐Ÿฉท Second pic was my last class teaching at Anytime Fitness ๐Ÿฅฒ

๐ŸฉทThe very last day of Anytime Fitness & my amazing time as a manager X I loved that place and the people in it x

๐Ÿฉท Celebrating the beginning of Elate Fitness, with a practice class in my garden ๐Ÿ˜‚

๐Ÿฉท First class at Goals sports centreโ€ฆ I started teaching just 2x classes a week, whilst working at Dance East Cafe x

๐Ÿฉท I then moved to Ravenswood & Lockdown struck! There were some positives for me as I was able to train outside & this brought the community together x

๐Ÿฉท Clients came to me rain, snow & shine ๐Ÿซถ๐Ÿป

๐Ÿฉท I was then super lucky to have been approached about a unit that was a stones throw away from where I lived ๐Ÿ™Œ

๐Ÿฉท My true Elate Fitness vision started to come to light ๐Ÿ˜€ & I got the lease for our lovely little private unit!

๐Ÿฉท I still have lots of work to do but things are progressing nicely ๐Ÿค—

๐Ÿฉท I have welcomed back those amazing clients that have stuck with me through and through (you know who you are ๐Ÿค—) and welcomed new faces with open arms ๐Ÿซ‚

๐Ÿฉท I look back on my journey and I am so proud ๐Ÿฅน from someone that lacks self belief, finds it difficult not to compare to others, is an over thinker, worries about the smallest things and worries about what people thinkโ€ฆ.. I have come a long way!!!
