If you're looking for a quick and easy meal that's seasonal and plant-based, then you've GOT to try this Vegan Feta and Butternut Squash Tart.🍠
We've used our mild & odourless organic coconut oil to roast our veggies, crisping them up without any overpowering taste.🥥
Here's the recipe - don't forget to save this one!
Ingredients:
🥧350g butternut squash, peeled and diced
🥧2 tbsp Biona Mild & Odourless Coconut Oil
🥧50g walnuts
🥧320g puff pastry
🥧2 tbsp tomato chutney
🥧100g vegan feta
🥧2 medium rosemary sprigs
Method:
1. Preheat the oven to 200/180C fan.
2. In a medium roasting tin, add the butternut squash and toss with 1 tbsp of coconut oil. Once tossed, season with salt and pepper and place in the oven to roast for 15 minutes. After 15 minutes, add the walnuts and place back into the oven to continue roasting for an extra 5 minutes.
3. In a baking tray, roll out the puff pastry, score about 1cm border around and prick the inside of the border with a fork. Spread the tomato chutney around the centre of the pastry and scatter slices of vegan feta all over the top.
4. Once the roasted butternut squash and walnuts are ready, add them on top of the tart and brush the outer border with some coconut oil. Drizzle a tbsp of coconut oil over the tart and add the rosemary sprigs.
5. Place the tart back into the oven for another 20 minutes or until it is crisp and golden.
6. Finally, remove the tart from the oven, allow it to cool for a few minutes, top with some extra vegan feta and enjoy. Perfect for chilly evenings - this tart is autumn comfort food at its finest!

We've used our organic coconut milk and raw virgin coconut oil to make this rich tasting plant-based Coconut Ladoo recipe.🥥
They're easy to make and perfect for sharing during your festivities.✨
Here's how we did it:
Ingredients:
🥥2 tbsp Biona Coconut Oil
🥥125g Biona Coconut Flour
🥥½ cup Biona Coconut milk
🥥1 tbsp sugar
🥥1 tbsp chopped nuts
🥥¼ tsp cardamom powder
Method:
1. In a nonstick pan, melt the coconut oil over medium heat. Once melted, add in the coconut flour and roast for 2 minutes, stirring constantly to ensure it doesn’t burn.
2. Next, add the coconut milk, mix it together and cook for around 2-3 minutes while the milk gets absorbed.
3. Then add the sugar, cardamom powder and chopped nuts. Continue mixing over a medium flame until the sugar is dissolved.
4. After 4-5 minutes over the heat, the coconut milk will eventually combine into a dough consistency. If not, add in some extra coconut flour to bind it.
5. Once you have reached this dough consistency, take off the flame and allow the mixture to cool down slightly.
6. Lightly grease your palms with coconut oil and shape the mixture into medium-sized balls. Press lightly to ensure they hold their shape.
7. Place the ladoos into the fridge to set for 15 minutes, then take them out and roll them in some coconut flour. Bring these delightful treats to your Diwali table for a festive treat everyone will love.

🌱Zesty pesto and coconut cream - Drizzle our organic pesto and coconut cream over your soup for a flavour boost!

Modern Food Stories has made these One Bowl Apple Spice and Slice Bars using our organic apple purée. Not only are they soft and delicious, they're also gluten free, plant-based and refined sugar free!💚
Here's how she made them:
Ingredients
3/4 cup our organic apple purée
3 tbsp flax meal + 4 tbsp water
2 small apples, cubed (plus 1 - 2 optional sliced for the top)
2 - 3 tbsp maple, to taste (you could use our organic maple agave syrup!)
1.5 tsp vanilla extract
4 tsp cinnamon powder
1.5 tsp baking powder
3 tbsp vegan protein powder or collagen
1.5 cups quick soak oats
1/2 cup walnuts, chopped
1/4 cup raisins
Preheat the oven to 190C / 170 fan.
Line an 8 x 8 inch baking tray with greaseproof paper.
Add the flax and water to a mixing bowl and bake in the oven for about 25 mins or until just set. If using apple slices you may need to cover loosely after about 15 mins with a sheet of tin foil to prevent too much browning.
Allow to cool in the tray for 10 mins to firm up then allow to fully cool for 30 mins before slicing into 6 bars.

Ingredients
🤍500g Biona Coconut Cream
🤍100g pistachios
🤍1-2 tbsp Biona Light Agave
🤍Melted vegan white chocolate (optional)
🤍Handful chopped pistachios (optional)
Method
Begin by adding the pistachios, coconut cream and agave into a blender, and blend until smooth.
Transfer the mixture into silicone moulds and freeze for 4 hours or overnight.
Once set, drizzle with some optional melted chocolate and chopped pistachios. It's that easy!
