**Kafteji: An Iconic Tunisian Vegetable Delight 🍅**

Serves: 4-6

**Ingredients:**
- 12 cl extra virgin olive oil
- 1 tbsp traditional harissa or sundried tomatoes Harissa by Moulins Mahjoub
- 450g pumpkin
- 350g potatoes, peeled
- 350g zucchini
- 2 peppers
- 400g tomatoes
- 150g onion
- 5 garlic cloves
- Chopped parsley
- 4-6 eggs
- 1 onion
- Salt

**To serve:**
Onion rings
- Parsley
Poached eggs

**Instructions:**
1. Dice (± 1 cm) pumpkin, potatoes, zucchini, peppers (without seeds), tomatoes, and onion. Mince the garlic cloves.
2. Mix all the vegetables and garlic with harissa and olive oil.
3. Season with salt and bake in the oven at 180°C for about 30 minutes, stirring occasionally.
4. Serve with chopped parsley, a few slices of raw onion, and a poached egg.

The **organic harissa paste** (185g) produced by **Moulins Mahjoub** in Tebourba, around the Medjerda valley in Northern Tunisia, adds a smoky heat and spice to enhance almost any dish. Made from sun-dried peppers ground with garlic, cardamom, salt, coriander, and extra virgin olive oil, this harissa brings a spicy umami taste to dishes like tomato sauces, couscous, m'hamsa, and pasta. The sun-dried peppers give this harissa a delightfully full, chewy texture and meaty depth, embodying the rich flavours of Northern Tunisia.

🍰🍋🍊 **Orange and Lemon Polenta Cake with Olive Oil** 🌿✨

Indulge in this deliciously citrusy and gluten-free treat. Made with fresh oranges and lemons, this cake is perfect for any occasion.

🕒 **Prep Time:** 45 mins
🕒 **Cook Time:** 45 mins
🍽 **Servings:** 6
🔖 **Calories:** 338 per serving

**Ingredients:**
- 3 oranges
- 3 lemons
- 100g blanched almonds
- 70g polenta
- 1 pinch of salt
- 120g sugar
- 50g pistachios
- 40ml Orobailen extra virgin olive oil
- 2 eggs
- 5g baking powder

**Directions:**
1. Boil one orange and one lemon for 25-30 minutes.
2. Roast and grind blanched almonds to a fine powder.
3. Roast pistachios, then set aside.
4. Blend boiled orange and lemon into a paste.
5. Squeeze juice from remaining oranges and lemons.
6. Beat eggs with salt until foamy. Add 80g sugar, olive oil, half the juice, orange-lemon paste, and almond powder, blending until smooth.
7. Mix baking powder with polenta and add to paste.
8. Pour into a lined tin and bake at 45-50 minutes.
9. Cook the remaining juice with sugar for 15 mins to make syrup.
10. Brush syrup on the cake and sprinkle pistachios.
