Once you’ve tried our bao buns, there’s no going back! 🤤
This smashed cucumber salad is the perfect accompaniment to our bao for a super quick and tasty lunch! Remember to save this post for future use! 🙌
Ingredients:
½ large cucumber
1 small chilli or a sprinkle of chilli flakes (optional)
Pinch of salt
2 tsp light soy sauce
2 tsp Chinese black vinegar / mild balsamic vinegar
1 tsp sugar
½ tsp sesame oil
Method:
1. Split the cucumber in half lengthways and scoop out the seeds, gently smack with a rolling pin to crack the cucumber and then cut into chunks.
2. Chop the chilli and mix this with the cucumber, then sprinkle with a little salt and leave to sit for up to 15 mins. Then rinse the salt off.
3. Mix all the other ingredients together making sure that the sugar dissolves properly, then pour over your cucumber and chilli. Finally, serve and enjoy!
