The easiest and most satisfying brunch: egg Mayo on crumpets and slices of tomatoes! Cannot go wrong and the crumpets are the best around. I don’t know what it is about eggs and Mayo together but I absolutely love it! What about you? Do you like egg Mayo?
Galectin-3 is a ‘rogue’ protein that is our master survival protein acting as a receptor. Our survival response is at the root of every chronic disease, because our survival mechanism is also responsible for cancer growth and cell growth.
Galectin-3 is the cell that sounds the alarm and it acts as both trigger and fuel for a whole cascade of pathogenic processes involving inflammation, fibrogenesis, tumerogenesis and immune dysregulation.
Galectin-3 can bind to many carbohydrates and based on what it binds to, it causes different responses. It goes up with age, trauma, stress and it degrades our body, so blocking Galectin-3 is the most important thing for longevity because it affects so many mechanism in the body.
Galectin-3’s sticky nature contributes to create biofilms that protect cancer cells and inflammatory compounds, so both cancer cells and inflammation can proliferate, metastasise and evade our immune system.
One study on 8000 people demonstrated that elevated Galectin-3 can increase mortality three-fold and low levels were found in centenarians (https://www.degruyter.com/document/doi/10.1515/cclm-2015-0821/html).
Galectin-3 is also a target, because when you block it, it reverses the illness.
Studies show that survival to sepsis and its consequent kidney damage depends on the levels of Galectin-3 at the time of infection.
Another study showed how Galectin-3 increased during a traumatic brain injury, stimulating the production of cytokines that then caused neurological damage.
Many studies have shown that Galectin‑3 can be used as a diagnostic or prognostic biomarker for certain types of heart disease, kidney disease and cancer (https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5752178/).

I think that the mix you find in the supermarket are absolutely fine, however they are not organic. And in my view cereals or grains that have been mass produced, they are as inflammatory as gluten or wheat because they may well contain pesticides (such as Roundup that contains glyphosate) that has been shown to cause leaky guts or problems in the guts.
Therefore I started making my own flour mix, with organic flours from and I never liked back! 👩🏻🍳 Recipe in 🇬🇧 & 🇮🇹
So my hubby left overnight oats a little too long in the fridge and they started fermenting, so I tried to use it to make sourdough teff bread! I left it for a day to ferment and then cooked it, but it didn’t rise much, so the consistency is quite dense! However when toasted it is divine and perfect for avocado or egg on toast 👩🏻🍳 Recipein 🇮🇹 & 🇬🇧
Pectosol C is a Modified Citrus Pectin (MCP) is derived from citrus peels and it has been found to bind to Galectin-3 and suppress its expression. It also helps the body to flush it out of the system and it binds to heavy metals and toxins, eliminating them from the body.
Importantly, the originally researched form of MCP (Pectasol C), bearing precise molecular specifications (3–13 kDa and less than 5% esterification) is the only available product researched to effectively block the actions of Galectin-3.
MCP holds the singular ability to enter the circulation and block Galactin-3. By blocking Galectin-3, MCP stops its actions of creating inflammation, fibrosis and tumour growth.
Since then, MCP has been studied intensely and been shown to benefit atherosclerosis, obesity, diabetes, kidney failure, many types of cancer (as a preventative measure or in conjunction with chemotherapy/ radiotherapy during treatment), Ischemic Heart failure, myocardial fibrosis, cardiac damage, heavy metals and toxins, renal and liver fibrosis and many more conditions.
Most of the studies have been conducted with Pectasol C, which has the correct molecular specifications required to block Galectin-3. SO BE VERY SELECTIVE ON YOUR PURCHASE!! I only recommend Dr Isaac Eliaz product, EcoNugenics Pectasol C, as this is the product that has been researched the most and shown to affect and block Galectin-3.
Another study showed reduction in injury induced neuropathic pain, by suppressing spinal nerve inflammation and therefore reducing the neuropathic pain (https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4752273/ ).
Modified Citrus Pectin influence on the brain may show in the future benefits for diseases such as Alzheimer and Parkinson’s.

Our body produces Vitamin D when our skin is in direct contact with the sun. The best way to absorb the sun is by exposing legs and forearms, without sunscreen out in the sun, but time and length of exposure vary according to skin color and geographic location. don’t use a sunscreen and you need the UVB rays, so you cannot do it behind glass or window.
In the UK, more than 20% of the population is deficient in Vitamin D, because in the winter the UVB radiation is not strong enough to make Vitamin D.
Vitamin D is important for absorption of calcium and phosphorus in the body. It helps controlling infections, reduce inflammation, regulate the immune system, protect the blood vessels and reduce cancer cell growth. Other bodily functions associated with Vitamin D are: mental and bone health, muscle tone and energy.
The best food sources of vitamin D are:
* Salmon
* Oily fish
* cod liver oil
* canned tuna
* egg yolk
Nowadays a lot of food is fortified with Vitamin D, like milk, yoghurt, cereals and wheat products
