Our first delivery from
At Penlan Farm in Cenarth (very near to where grew up), Hugh and Katherine raise Mangalitza pigs on a natural diet of brewers grains, mixed fruit and vegetables, whole barley, fodder beet, cheese, and whey. These pigs roam freely in a five acre paddock and woodland, living as close to nature as possible. Once nearly extinct, this heritage breed is known for its exceptionally tender and flavorful pork.
As always, we will be using every part of the pig, from pork chops to liver sausages, coppa di testa, and cotechino for Christmas - even the blood is reserved for our buristo.
It’s wild mushroom season—here’s this mornings delivery of fresh porcini. We will be cooking these delicious, plump mushrooms in our risotto, made with only a little garlic and parsley for a true taste of autumn.
Last night, we celebrated the start of the truffle season by cooking some of our favourite Piedmontese dishes, all perfectly complemented with shavings of the beautiful ochre tubers. Each year we anticipate our first glimpse of Alfredo Romani’s highly sought after white alba truffles, eagerly awaiting their incredibly distinctive aroma wafting through our gelateria.
Throughout the season, a selection of .romanitruffle white truffles will be available across the road at for you to bring and enjoy with your meal here. Look for dishes marked with a “T” on our menu to pair with these exquisite truffles.
One of the most exciting updates to the restaurant is our newly decorated Private Dining Room.
We commissioned artist Stewart Helm to create hand painted murals for the room, bringing a world of mythical creatures to life. Through their animal instincts, he captures the joy and pleasure of indulging in food and wine, reflecting the spirit of Soho’s diners.
When our Private Dining Room is available, feel free to take a look and explore its wonderfully wild walls.
Truffled radish, celeriac, pomegranate & pecorino salad.
Surprisingly elegant in its marriage of cheesy, peppery and mushroomy earthiness. This is the dish that has launched hundreds of thousands of meals here, and the only time we use truffle oil whilst we eagerly await the start of white truffle season.
Last week, a few of our team were lucky enough to travel to the breathtaking region of Trentino. A few of the team are heading to Trentino today for a few days of hiking around the lakes in the Dolomites, dining in local Baita, and visiting one of our wine suppliers .
