Earth Overshoot Day marks the date when humanity has used all the biological resources that Earth regenerates during the entire year. This means we are now living on credit, spending natural resources much faster than the earth can produce them 💔🌍
We always find this day overwhelming at Kitche but it also invigorates our fight against food waste. 💪
There are many existing solutions that can be implemented at scale to of Earth Overshoot Day and food waste is one of them.
The amount of wasted food is equivalent to about 9% of the global Ecological Footprint. If we cut food waste just by half worldwide, we would of Earth Overshoot Day by at least 13 days.
So let's do this team, let's eat those broccoli stalks, freeze what we can't eat today and compost those egg shells, little by little, bit by bit let's make a BIG difference. Kitche it, don't ditch it! 🙌 🌍🌱

Still not quite ice lolly weather ? How about this for Summer on a stick?! it's also great for using up bananas on the turn.
🍌 Peel the ripe bananas and cut them in half crosswise.
Insert a wooden lolly stick or bamboo skewer into the cut end of each banana half.
Place the banana pops on a baking sheet lined with parchment paper and place in the freezer for at least 2-3 hours or until they are completely frozen.
🍌 Melt the chocolate in a microwave-safe bowl or using a double boiler. Stir the chocolate until it's smooth and fully melted.
🍌 Take the frozen banana pops out of the freezer.
Dip each banana pop into the melted chocolate, coating it entirely or partially, depending on your preference.
🍌 Add toppings: While the chocolate is still melted, roll the coated banana pops in your favourite toppings, such as chopped nuts, shredded coconut, or sprinkles.
🍌 Freeze again: Place the chocolate-coated banana pops back on the baking sheet lined with parchment paper and return them to the freezer. Let them freeze for another 30 minutes to set the chocolate and toppings.
Enjoy: Once the chocolate has set, your frozen banana pops are ready to enjoy!

Here are 10 quick, easy and healthy snacks for kids this half term:
🍏 Apple Slices with Peanut Butter
Core and slice an apple, and serve with a side of peanut butter for dipping.
🍇 Yogurt Parfait
Layer Greek yogurt with fresh berries and a sprinkle of granola.
🥕 Veggie Sticks with Hummus
Cut carrots, celery, and bell peppers into sticks and serve with hummus.
🧀 Cheese and Whole-Grain Crackers
Pair slices of cheese with whole-grain crackers.
🍌 Frozen Banana Pops
Slice bananas, insert a popsicle stick, dip in yogurt, and freeze.
🍋🟩 Fruit Kabobs
Thread chunks of various fruits onto skewers for a colorful snack.
🥜 Trail Mix
Mix nuts, dried fruit, and a few dark chocolate chips.
🧃 Smoothie
Blend a mix of frozen fruits, spinach, and a splash of milk or juice.
🍇 Cheese and Grape sticks
Pair cheese cubes with sliced grapes on skewers for a tasty mix of protein and fruit.
🥒 Cucumber Sandwiches
Slice a cucumber into thick rounds and use them as "bread" to sandwich a slice of turkey or ham and a bit of cheese.

This Earth day - Kitche it, don't ditch it.
With bagged salads being one of the most wasted foods in the UK with over half of it ending up in landfill 😱 we LOVE this genius recipe from the awesome food waste warrior Jack Monroe.
Salad-bag Pesto
Ingredients
150g bag of salad
1 fat clove of garlic or 1 tsp garlic paste
60ml sunflower oil
25ml lemon juice
A pinch of salt and pepper
Method
Finely chop your salad or use a bullet blender or food processor.
Combine in a bowl with finely chopped garlic/or a teaspoon of garlic paste.
Add the oil, lemon juice, salt and pepper and mix well. Store in a jar in the fridge for up to 4 days, or in the freezer for a few months.
You may want to add finely grated cheese to it to make something more closely resembling a traditional pesto. Serve over warm spaghetti with a couple of very finely chopped tomatoes folded through and a smattering of extra pepper 😋👌
🥬 Kitche it, don't ditch it! 🥬
Half term + little ones + leftover Easter treats = Easter Cookies 🍪😋
250g Plain Flour
½ tsp Baking soda
¼ tsp salt
170g Unsalted Butter (melted)
200g Light Brown Sugar
100g Caster Sugar
1 tbs Vanilla extract
1 x Egg
Any Easter chocolate chopped small
Makes 20 but mixture can be frozen
Method:
Preheat oven to 170 degrees
In a medium bowl pour in flour, bicarb and salt.
In a large bowl cream together the melted butter and sugar then add in the vanilla and egg.
Add in the flour mix and chopped chocolate and mix until just blended together.
Roll balls around the size of golf balls and place onto a greased baking tray leaving around 8-10 cm gap in between each cookie and do not flatten mixture.
Bake for 10-12 mins. The edges should just slightly be toasted
Leave to cool and harden then enjoy! Chef Dan
