Indulge in the perfect pairing: Marc Hebrart Blanc de Blanc 1er Cru NV from Champagne, France. This 100% Chardonnay offers a chalky freshness that complements our leek cream beautifully, while the vibrant acidity and bubbles cut through its richness. The buttery notes of this exquisite wine mirror the flaky boyoz pastry and brioche, creating a harmonious match for a truly indulgent experience.

Our third course is paired with Lossterrassen Grüner Veltliner 2020 from Kremstal, Austria, this beautifully balanced dry white wine perfectly complements our dish. With just the right acidity to balance the citrus in the artichoke filling and enough subtlety not to overpower the delicate flavours, it enhances the richness of Manchego cheese and basil pesto. The wine's stone fruit aromas harmonise with the grilled orange, making it a true game-changer.

Kebab Queen will be closed from 8th - 24th September to give our team a well-deserved break. We'll be launching a new menu on 9th October, so make sure to experience our current menu while you still can.
Introducing the second wine pairing at Kebab Queen: a beautifully balanced Chardonnay from Côte Chalonnaise, Burgundy. Fermented in 50% new wood, this wine boasts rich, intense flavors with a subtle minerality and a powerful, lingering finish. With a touch of bitter citrus emerging slowly, it pairs perfectly with the fresh gazpacho and tangy goat cheese, creating a harmonious and invigorating experience.
Just a few weeks remain for the current menu, so make sure to reserve your spot before it's too late. Kebab Queen will be closed from the 8th to the 24th of September for the team to take a well-deserved break, before the exciting new menu debuts in October.
Pam has used Turkey's national drink, Raki to cure the trout. Raki is a sweet, clear brandy which teases the tongue and brings together sweet notes in perfect harmony. We have paired a 100% Pinot Noir grape Alsace Rosé which light and refreshing and has an opulent mouthfeel. Light and pleasant texture enough not to overpower the delicate trout. Very fruity to harmonise well with the earthy beetroot and cut through the slightly tangy tarhana crisp.

What inspires the dishes?
All my dishes are inspired by my childhood, my chefs and the restaurants i have worked in. I usually get my inspirations from nature, seasons,elements and archetypes. After I come up with an idea, I try to create balance in between the courses/dishes if we are specifically talking about a tasting menu.
What would your final meal be?
My last meal would be defo Branzino en Papillote stuffed with olives, onions and salicornia, served with potato puree (hand whipped, old school French style) and I think I’d enjoy this with a citrusy white wine
