Located in the Nottingham College City Hub, situated between the Lace Market and Broad Marsh. Fletchers boasts a commercial restaurant and 200-seater theatre.
The Restaurant can be accessed easily using public transport. If you are travelling by tram alight at the tram stop next to the train station (less than 5 mins walk) or by bus at the new Broadmarsh bus station (less than 5 mins walk). If you are walking from the city centre use the stairs next to the Nottingham Contemporary. We are open (term time only) for morning coffee and lunch from midday Wed
Our penultimate week featured the best of British with our British Summertime menu. With both evenings sold out our young chefs delivered a raft of stunning dishes, showcasing the finest seasonal produce. The highlights of which included:
Pea velouté, chive crème fraiche, summer truffle shavings (v)
Fillet of seatrout, pappardelle, artichoke, sage cream, burnt caper dressing
Breast of chicken, crushed Jersey Royals, chicken ballotine tarragon cream, sorrel oil
Baby beetroot risotto, Rosary crottin de chavignal, smoked pepper dressing (v)
Champagne jelly, mixed berries, vanilla, clotted cream ice cream

Bonet alla Piemontese
Piedmontese cuisine is the style of cooking in the Northern Italian region of Piedmont. Bordering France and Switzerland, Piedmontese cuisine is partly influenced by French cuisine.
The Slow Food Movement started in Piedmont by Carlo Petrini who was from the town of Bra, Piedmont. The movement greatly benefited the region by highlighting Piedmont's diverse cuisine. The Piedmontese town of Alba is known for its gourmet food and of course famed for Alba White Truffles, fetching between £2,500-£5250/kg at auction.

The second showcase feature of one of our Level 2 student takeover evenings from last month. This time we have Mia Reynolds who devised another creative, complex and fascinating Level 2 menu combining flavours from Korea with a strong Italian influence. It was a very bold and ambitious menu which really did deliver and wow our guests... Well done Mia, there was a huge amount of research and work that went into your evening's success 👏

Nose-to-tail cookery is where a chef aims to incorporate as much of an animal as possible into their menu, thus reducing waste. This sometimes involves butchering whole carcasses on-site. It allows for fuller utilisation of an animal often with tasty but neglected cuts. It can command a greater level of skill and creativity and importantly it is a vital component in sustainable cookery.

'Cocktails on a Plate' 🍸 - Wednesday 1st May 2024 - Was an evening of dishes inspired by classic cocktails from around the globe by our level 2 Professional Chef Diploma student Dylan Patel.
A very well done Dylan, it was a fantastic effort, full house, creative menu, delicious plates of food and very happy customers (especially mum and dad). Dylan also dedicated all gratuities to The Oddballs testicular cancer charity.

Notts Derby Wine School return in a couple of weeks to pair some fantastic wines with our Tour of Northern Spain menu!
Debbie Ault DipWSET from the school will be hosting this Food and Wine pairing evening. She has carefully sourced a selection of 6 Spanish wines from to pair with our Northern Spain menu featuring iconic dishes from a region famed for its beautiful cuisine. On the night Debbie will be introducing the wines and explaining how and why they pair with our menu.

Our brand-new seasonal lunch menu started on Wednesday, exceeding our customers' high expectations...
Highlights featured new dishes bursting with fresh seasonal flavours, such as the assiette of smoked fish, celeriac remoulade, lemon chive cream, sourdough wafers to start, followed by red wine braised blade of beef, horseradish mash, grilled asparagus or Fletcher’s fish & chips, pea & mint purée 😋
Our vegetarians were not left out, the grilled aubergine ‘steak’, Provençal vegetables, salsa Verde has been given the double thumbs up! The desserts have all gone down equally well as you would imagine with a warm chocolate tart, vanilla panna cotta, raspberry textures or poached rhubarb trifle, pistachio crème fraiche and finally the banana and caramel ice cream sundae!

We ventured into South American cuisine last night to a full round off a fantastic term, with high praise for these two standout dishes of the evening...
Seabream ceviche
Ceviche is a dish consisting of fish or shellfish marinated in citrus and seasonings, recognized by UNESCO as an expression of Peruvian traditional cuisine and Intangible Cultural Heritage of Humanity. The seasoning we used last night included star anise, cinnamon, clove, citrus peel, chilli, oregano, thyme to name a few!
Barbecued beef rump asado
A beautiful piece of rump cap, or picanha as it's known in Brazil, is the most prized cut of meat often the star of the show of an open barbecued meat, asado. Accompained by the ubiquitous South American punchy herby, garlicky green sauce chimichurri.
Join us after the Easter break as we continue our exploration of wonderful regional cuisine with Umbria 🇮🇹 by our talented level 2 student Arianna on Wednesday 17th. Followed by St Georges Day 🏴themed menu the following day.

Vegan Indian 'Revisited' Evening, Wednesday 18th October
In April 2022 a young Professional Chef Diploma Level 2 chef by the name of Kayne Mathers devised and executed a fantastic vegan Indian menu in competition with his peers, as part of his programme of study. The night was a resounding sucess, with great customer feedback.
Fast forward to the here and now and Kayne is on the cusp of completing his Level 3 apprenticeship, in a supporting chef role in the Fletchers kitchen. To celebrate his successful tenure and development at Fletchers, Kayne will be revisiting his Vegan Indian menu to 'remix, revamp and reimagine' those dishes utilising techniques and knowledge he has learned throughout his journey to really deliver on flavour. It was good last time but it promises to be even better this time!
So whether you are a wholly plant based, a part timer flexitarian or an all out meat eater this is one not to be missed! Join us on Weds 18th Oct...

Going out with a bang on our End of Year Gala Evenings...
We certainly finished on a high with exceptionally good food and service to round off a fantastic year! Wow.
As our students have done us proud and are taking a well earned rest before returning in September for the next stage in their culinary journey. We wish those who have completed their programme of study all the very best for the future as they embark on their exciting career path.

The final products in all their glory produced by our young Level 3 virtuoso Kayne Mather and brigade of level 2 chefs on Wednesday. Kayne has really thrived and flourished under the expertise, support and guidance of our Head Chef Jim Tippett this year.
Kayne successfully completed Level 1 and 2 Professional Chef Diploma at the college and will be finishing his L3 Fletchers apprenticeship in October - he is a fantastic member of the team and we will miss him. He is a focussed and determined lad who will go on to great things, well done Kayne! 👏
