We soak organic rye grain from the wonderful Emma
Then we sprout it.
Once the germination starts we wait until the newly formed root is the same length as the Rye berry,
Then we dry it in a low oven.
It is then milled into a malt powder ( it smells amazing) This is what helps give our Rye bread its depth of flavour making it a 2⭐ Great Taste winner.
We lastly mix this with Organic Stoneground dark Rye flour from
This is one of our most popular breads which is saying something considering when we first started baking at the Fat Batard there wasn't a demand for Rye.
We changed our recipe and well, the rest is history.
Did someone say chocolate brownie cruffin? Filled with chocolate brownie cremeux and topped with our delicious sourdough brownie 😋. Good morning, we are ready with a brand new menu for you all. First up is the chicken ballotine (boneless leg filled with chicken mousse and poached) with onion soubise and herby crumb. Roasted Mediterranean vegetable focaccia sandwich with onion mayo and balsamic glaze. Finally our delicious Boston cream doughnut. Filled with a light, creamy custard and finished with chocolate icing. Pop along for a try, you won’t regret it! See you soon!

Thursday is Pastry day at the Bat. Come get some 😀😀
This is around 80 kg of flour waiting to be mixed into 26 different flavoured sourdough. Once the water and starter is mixed in it will make about 130kg of dough. 90% of what we do in the bakery,bread wise, is hand mixed. Out of this load, only 2 will be mixed in the mixer.
This is one of the reasons we ask for you to pre order at least the day before so that we have enough of each variety of sourdough for the shop. If you pre order it gives us a chance to make our mixes more specific to what we need. That way everyone gets what they would like when they turn up at the shop.

Good morning! While our poor sweet starter is recovering we have made a couple of extra cakes for the shop. Red velvet muffins have made a return for one day only (delicious red velvet sponge filled and topped with cream cheese frosting) and we also have some strawberry tarts too. Every second Saturday 8am until
4pm.
Additional holiday/ illness cover will also be required for both positions.

Strawberry tart inspired cruffin (filled with strawberry compote, vanilla custard, topped with mascarpone cream and strawberry). More of the dauphinoise Danish and caprese sandwiches too. Good morning! It’s new menu week again, and we have some very delicious specials on for you all. Stroopwafel doughnut (our finger doughnut filled with lots of caramel cream, caramel drizzle and topped with stroopwaffel). Smoked Brie dauphinois potato danish (dauphinois potato layered with smoked Brie, caramelised onion puree and crispy onions). We are looking for a plumber to come out to our shop in Peebles to sort a leaking pipe that is over an electric boiler. The only way to turn the water off it to turn all the water to the whole shop off.
