The history of stuffed vine leaves, commonly known as "sarma" dates back centuries in the Middle East. The technique of wrapping rice, meat, and spices in grape leaves have been popularised during the Ottoman era. Placing the ingredients neatly and wrapping them well are key to the right texture and taste. It symbolises the ingenuity of using simple ingredients to create flavourful and satisfying dishes. Today, sarma is cherished for its delicious taste and historical significance and remains a beloved part of Turkish, Middle Eastern, and Mediterranean cuisine. Our guests regularly enjoy sarma as a starter, a side or both. 😊

Culinary history of Coban Salad 😊

The word "çoban" means shepherd and the name originates from the fact that it can be made with ingredients readily available to shepherds. This delicious and nutritious salad from the heart of Anatolia, consists of fresh vegetables and greens, traditionally prepared with tomatoes, cucumbers, peppers, onions, and parsley and seasoned with olive oil, lemon juice, or vinegar. Known for being both tasty and healthy, it is highly favoured during spring and summer when there’s an abundance of fresh vegetables. Given its popularity worldwide, various cultures now have their own versions. However, the traditional Turkish recipe, which excludes cheese and maintains its natural taste and simplicity, makes it one of the frequently consumed salads.
