Breakfast doesn’t have to be boring. Make the most of strawberry season by checking out the recipe below 🍓🍞

📝Shopping list

For loaf:
- 100g golden caster sugar
- 1 tbsp EVOO
- 2 large eggs, room temp
- 1 tsp vanilla extract
- 150g oat flour
- 50g ground almonds
- 50g plain flour
- 1 tsp bicarb of soda
- 1 tbsp baking powder
- 450g strawberry yoghurt
- Zest of 1/2 a lemon
- Handful of strawberries, diced

For compote:
- 450g strawberries
- 3 tbsp sugar
- 3 tbsp orange juice
- 2 tbsp cornstarch

🧑‍🍳Instructions

1. Preheat the oven to 170°C.
2. Mix yoghurt, eggs, vanilla, zest and olive oil until smooth.
3. Fold in the bicarb, baking powder, almonds and both types of flour (being careful not to overmix).
4. Tip into a large lined loaf tin and top with diced strawberries.
5. Bake for 50-60 minutes (or until a knife comes out clean).
6. Meanwhile, to make the compote, rinse the strawberries and pat them dry.
7. Cut off the green tops and cut the larger berries in half.
8. Place strawberries in a heated saucepan, add the sugar and juice.
9. Once it starts to boil, reduce the heat to low and simmer until the strawberries are all soft (between 5 and 10 minutes).
10. Taste and add more sugar if needed.
11. As the compote cools it should thicken, but if it needs a little help, just mix your cornstarch with water and add it in.
12. Stir well and remove from the heat. Once it's cooled completely, pour over a slice of your loaf and enjoy.

Some of you may remember friend of Morrisons and inspiring fundraiser Jack Thompson. Jack was diagnosed with a brain tumour when he was 4 months old, leaving him registered blind. After seven rounds of chemotherapy, proton therapy and nightly growth hormone injections, Jack's spirit remains unbroken. 💪

Now 16, Jack has been fundraising at Morrisons since 2018 and has raised over £160,000 for our previous charity partner Young Lives vs Cancer and has visited an impressive 195 Morrisons stores. During our five year partnership with the charity that has supported Jack and his family for many years, we funded a brand new Home from Home in Manchester, providing free accommodation to young people receiving cancer treatment nearby, we named the Home Jack's House in recognition of our special relationship with Jack.

Jack has been gearing up for his final fundraiser before he takes a break to concentrate on his studies and is aiming to reach £50,000 taking on a SkyDive. Let's fly with Jack and support his incredible journey!🚀

Special delivery 🛒💚

To celebrate our 125th birthday, we’ve rolled out our first Morrisons van to make an extra special Morrisons delivery. The 75-year-old vehicle first hit the road in 1948, driven by William Morrison to transport groceries to Bradford’s Rawson Market. Today, it came out of retirement to visit a local customer in Skipton, Yorkshire.

Here’s to our longest serving colleague, Elizabeth Hudson 🥰

Working in our Yeadon store since 1970, Elizabeth started in the cafe before moving over to Market Street’s deli counter. She was the first Morrisons colleague trained to make a pizza, which she later served to Lady Morrison herself. “It’s like one big family here!” says Elizabeth. We love to see it 💚
