The Welbeck Bakehouse prides itself on the traditional fermentation processes, pre-ferments and long fermentations used to develop our great taste and artisan style. True to the craft, our Sourdoughs each have their own unique flavour, aroma, chewy texture and crumb. It's the final week of the Euros and football fever is growing... And with a semi final to look forward to on Wednesday,.. it's getting closer to coming home.

Ok ok ok.... What do you get if you cross the superb Red Feather Ale with cake??
Well what you get is this stunning flavoursome delight.
Red feather is an Auburn ale with hints of caramel and walnut.
We've used this Ale in our sponge, enhanced the flavour with extra caramel and mixed in chopped walnuts.
Then used the ale to make a beer buttercream and sprinkle with extra walnuts!
All of our cake range is made with 100% British butter, organic flour and has NO artificial flavours, colours or E-numbers.

We are overwhelmed with joy to have been awarded UK Large Farm Shop of the Year at the coveted Farm Shop and Deli Show and awards this afternoon.
The UK has an incredible Farm Shop industry, and we are delighted that after being shortlisted and mystery shopped by a previous winner, a panel of industry experts chose Welbeck for this prestigious award, and we also picked up ‘Midlands Retailer of the Year’
We are privileged to work with amazing colleagues and suppliers, and we all thoroughly enjoy sourcing the best food and interacting with our wonderful visitors and friends at the shop and cafe.

There are hundreds of bakers just like us that follow these principles.
We're not trying to be almighty and prove we're better... Bread is the simplest of things and part of our everyday lives.
You don't have to be rich to eat real bread. You just need to care about what you eat.
One slice of properly made bread fills you more than 2 or 3 slices of highly processed bread.
It digests easier and shouldn't leave you feeling bloated.
The magic ingredient is time.. letting the flour, water, yeast and salt do it's natural process.
Support your local independent bakery.
They work long hard hours, mostly when everyone sleeps. They use the simplest of ingredients to create loaves that aren't square, they don't fit into plastic bags, with 7 - 14 days life.
The loaves they make will have holes, be strange shapes, not be square.... They will be tasty, healthy, and made with heart and soul.
Real Bread is additive-free.
Start throwing in chemical raising agents, undeclared ‘processing aids’ or other additives* and it’s no longer what we call bread, it’s an industrial dough product.
Bread made by the sourdough process, and unleavened flatbreads, can be made from just flour and water, though most people add salt as well.
Many bakers use liquid, compressed or dried cultured yeast (usually Saccharomyces cerevisiae) to make their Real Bread dough rise.
You might also choose to add other unprocessed or minimally processed ingredients (such as nuts, seeds, oil, malt, eggs, dairy products etc.) into your Real Bread dough.
Beyond that, things stray from processed food into Nova category 4 territory: additive-laden ultra processed food (UPF).

*with the exception of the four mandatory ‘fortificants’ added to non-wholemeal wheat flour in the UK.

They are made with all butter, and all natural ingredients.
Let's start with our personal favourite.. a trio of loaf cakes! Each one just perfect to share. A mini lemon drizzle cake, a mini carrot cake and a mini rich chocolate cake.
Then there's our rich sticky toffee cake - perfect warmed and served with custard.
A true classic - coffee and walnut! Great with a coffee and cream.
A rich, indulgent, moist chocolate cake, topped with a milk chocolate ganache and chocolate curls.
Cherry and almonds combine in this original take on the flavour of a Bakewell tart.
The lemon drizzle cake is light and fluffy, topped with a zingy icing and lemon zest.
Fruity and spicy, our carrot cake isn't to be missed.. but don't forget to share the pecans out!
And finally, our latest seasonal cake (just in time for mothering Sunday) is an elderflower and lemon cake, topped with a lemon and elderflower icing and edible flowers.
But what does actually mean?
To us, it's just bread, bread how it should be made!
Water, flour, salt and yeast or sourdough starter.
This is the base for how bread should be made.
Additives are there to...
* increase the volume of bread meaning that the size of the loaf is inflated with gas to make it seem bigger.
* Increase the life of the loaf, to reach 7, 10 or even 14 days shelf life.
* Soften the bread. Make it more "gloopy" and eat easier. But this means that it's harder to digest.
Bread should be crunchy, chewy, easily digestible and taste great.
Buying locally produced bread supports the craft of the baker and the skill of an age old process.

The ever popular 100% rye and sunflower seed vollkornbrot, dense and packed with flavour.
Our Welbeck teacakes are bursting with fruit and spices.. great toasted, and Also available in a loaf, for easier toasting!
Our brioche buns are sweet and savoury! Packed with all British butter and glazed with a free range egg wash.
During , we feel it's also very important to highlight that real bakers make real bread.
We limited the amount of machinery to an absolute minimum, which means that around half a million loaves are scaled, moulded and shaped by hand, every year!
Whilst real bread Week primarily focuses on additive free bread, we keep the focus on additive free in all of our products.
By combining great ingredients and using our bakers skills and expertise, we believe that no artificial additives need to be used.
Our brand new granola range uses only British oats, grade A Canadian maple syrup with dried fruits, seeds and nuts.

Our croissants are made using the finest french butter and organic croissant flour with nothing artificial added!
Flour, water, sugar, butter, salt and bakers yeast... That's it!
