The same goes with the independent family farmers with conservation or land regenerative goals.

The symbiosis between grazer, grass & soil is perhaps nature’s most powerful relationship in keeping our planet habitable. When livestock are managed holistically and correctly, proof is in the land transformation

The toughest sheep breed in the world, the mighty Herdwick. I always had a special affinity towards the ultimate survivalists in native breeds from extreme environments, perhaps because of what they mean to livestock biodiversity & regenerative land goals.
Nothing survives up the top of the Lake Districts mountains except for this ancient breed, one that has evolved and adapted to this unique environment for over 1000 years. Truly special. Only at HM.

Native biodiversity plant conservation with ancient breeds - not all grasses are the same.
Instead of clearing land and planting a few commercial varieties of grasses dependent on artificial inputs, these Shetland cattle are grazed on conservation sites nurturing a diverse variety of native plants, which are important to the biodiversity of other biotic communities both above & below the ground. Biodiversity is crucial to the health and renewability of landscapes.
Native ancient livestock breeds, unlike commercial breeds, are our greatest tool for conservation as they’ve adapted to thrive on these coarser plants, they eat less and are smaller so are better suited to these fragile environments.
In nature, nothing exists in isolation. Plants and land needs grazing animals just as much as the other way. Grasses need periodical grazing to maintain productivity and other biotic communities needs the presence of grazers for their fertility and trampling activity to thrive. Through careful management and observation farmers can mimic this natural symbiosis to achieve ecologically restorative goals on their land.
On the culinary side, cattle grazing on a great diversity of wild native grasses vs commercial grass monocultures are far more richer and complex in flavours, derived from richer and complex nutrition. Think why game has gamey flavour. This is why our rare heritage breeds boasts just as much flavour, if not stronger, than game meat such as venison.

Its been a blessing to see how physically unique each individual beast is that we source in, even from the same farm, let alone in each breed.
The celebration of individual variation and diversity in livestock is so important to us, its a way of reconnecting with the reality of the natural world that surrounds us. It also leads to a far more invigorating approach to our butchery & cookery, and hence the gastronomic experience we offer at HM.
