我們豚勝Tsukanto致力追求完美的炸豬排，製作過程絕對一絲不苟。豬排以52度真空慢煮2小時，這種加熱方式可保持豬排肉質鮮嫩及保留肉汁。然後以針錘把豬排揼鬆，使肉質變得更鬆化。再經過三段油炸步驟，先以約175度高溫將豬排快炸以定型及鎖緊肉汁，再以低溫約90度炸1分多鐘，讓熱力滲透令豬排中心變熟，最後再提高油溫至175度炸半分鐘將多餘油份逼出，一份酥香且鬆化的高質炸豬排就這樣誕生。

At Tsukanto, we are dedicated to pursuing the perfect pork cutlet with meticulous production process. The pork cutlet is slow-cooked at 52 degrees Celsius for 2 hours, a cooking method that ensures the meat remains tender and retains its juiciness. Then, the pork cutlet is hammered with a meat mallet to further enhance its tenderness. It undergoes a three-stage frying process, starting with a quick fry at approximately 175 degrees Celsius to shape and seal in the meat juice, followed by a gentle fry at a low temperature of around 90 degrees Celsius for one and a half minute to allow heat pe*******on to cook the center of the cutlet. Finally, the oil temperature is raised back to 175 degrees Celsius for half a minute to remove any excess oil. This results in a crispy, tender, and flavorful high-quality pork cutlet.

Two days until Tsukanto opens!! Tsukanto is arriving at Elements this Sunday, 11 June. We take pride in our expertise in crafting exceptional tonkatsu that only features the different types of best-quality pork.
At Tsukanto, our pork is the star ingredient, we use Japanese premium-quality pork —-“Kumamoto Rindo Pork”. This renowned delicious pork is produced in Kumamoto, Kyushu. The local farmers carefully select the wheat and the right nutrition to raise these high-quality fats of Kumamoto pigs, which makes the meat more tender and has a slightly sweet aftertaste.
A specially selected thick-cut Kumamoto Rindo pork loin creates the best, tender meat quality, every bite is meaty and juicy, full of flavors. If you want to try the best tonkatsu, you have to visit and try out our Rindo pork tonkatsu!!

Our menu, which has been curated by the Michelin-starred Japanese chef Naotaka Ohashi .tirpse, features a variety of cuts of pork, we sous vide our pork before deep-frying, making our Tonkatsu medium well, utilizing Chef Ohashi's specialized French slow-cooking technique.
