𝐅𝐞𝐫𝐫𝐚𝐠𝐨𝐬𝐭𝐨 is the most anticipated day of the summer for Italian people!
It falls on the 15𝑡ℎ 𝑜𝑓 𝐴𝑢𝑔𝑢𝑠𝑡 but it doesn’t stop us to celebrate it throughout the weekend.

𝐅𝐮𝐧 𝐟𝐚𝐜𝐭 (yes, learning is fun!): it comes from 𝐹𝑒𝑟𝑖𝑎𝑒 𝐴𝑢𝑔𝑢𝑠𝑡𝑖, a celebration dedicated to Emperor Augustus, who established August the 1st (moved later on to the 15th by the Catholic Church) as a day of rest following a period of intense labor in agriculture.

𝐖𝐡𝐚𝐭 𝐝𝐨 𝐈𝐭𝐚𝐥𝐢𝐚𝐧𝐬 𝐝𝐨 𝐨𝐧 𝐅𝐞𝐫𝐫𝐚𝐠𝐨𝐬𝐭𝐨? We spend the day at the beach, fire up barbecues and chill with friends & family! Come and celebrate Ferragosto with your 𝐓𝐞𝐬𝐭𝐢𝐧𝐚 𝐟𝐚𝐦𝐢𝐥𝐲 and enjoy some treats prepared by Chef Marco for this occasion.

𝐎𝐧 𝐭𝐡𝐞 𝐦𝐞𝐧𝐮: Mediterranean Octopus Salad, Cannelloni filled with Ricotta Cheese & Spinach, Parmigiana di Melanzane (such a perfect classic!), and Seppie alla Griglia!

Summer is our favourite season as light and fresh flavours take over Testina's menu!
Let's welcome back the Giarratana Onion, served with onion purée, mediterranean pesto and dry tomatoes.

The 𝐨𝐧𝐢𝐨𝐧 𝐨𝐟 𝐆𝐢𝐚𝐫𝐫𝐚𝐭𝐚𝐧𝐚 is a particular variety of sweet onion from Sicily. It is a 𝑆𝑙𝑜𝑤 𝐹𝑜𝑜𝑑 𝑃𝑟𝑒𝑠𝑖𝑑𝑖𝑎 and the entire production process is done manually. The sowing process takes place from the end of October and the harvest starts at the beginning of July and it ends in September. Why don't give it a try?

Cavatelli pasta is an eggless, slightly chewy pasta made with just flour and water. It is one of the oldest types of Italian homemade pasta and finds its origin in Molise and Apulia regions.

With skilled hands and a touch of patience, you can craft these delightful little dumplings, named ‘cavatelli’ for the charming dimple formed by gently pressing a finger into the dough.

We serve this beloved pasta with slow-cooked octopus in tomato sauce topped with dry fennel, delicious! 🐙 🍅

In collaboration with 𝐂𝐞𝐫𝐭𝐚 𝐏𝐥𝐚𝐭𝐟𝐨𝐫𝐦, on 𝐖𝐞𝐝𝐧𝐞𝐬𝐝𝐚𝐲 𝟐𝟓 𝐎𝐜𝐭𝐨𝐛𝐞𝐫 we are welcoming 𝑺𝒂𝒏𝒅𝒓𝒊 𝒆 𝑷𝒐𝒋𝒆𝒓 winery, one of the most renowned wineries in Italy, and 𝐌𝐫. 𝐅𝐞𝐝𝐞𝐫𝐢𝐜𝐨 𝐒𝐚𝐧𝐝𝐫𝐢, son of the co-owner Fiorentino Sandri and active member of the family business.

In Testina we recognize the importance of keeping old traditional recipes alive, recipes that would otherwise be forgotten and our signature 𝐇𝐨𝐦𝐞𝐦𝐚𝐝𝐞 𝐏𝐚𝐩𝐩𝐚𝐫𝐝𝐞𝐥𝐥𝐞 𝐰𝐢𝐭𝐡 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐎𝐟𝐟𝐚𝐥 𝐑𝐚𝐠𝐮̀ is a clear example.

The ragù includes slowly cooked poultry offal such as: kidneys, livers, combs, embryonic eggs, testicles, and so on, which are meticulously prepared separately first, then cooked with butter and fresh thyme, and finished with white and marsala wine on homemade (any doubt?) pappardelle.

Our 𝐇𝐨𝐦𝐞𝐦𝐚𝐝𝐞 𝐏𝐚𝐩𝐩𝐚𝐫𝐝𝐞𝐥𝐥𝐞 𝐰𝐢𝐭𝐡 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐎𝐟𝐟𝐚𝐥 𝐑𝐚𝐠𝐮̀ will be available all month (including lunch, as part of our Set Lunch Menu)!

Homemade Cavatelli, Seafood Broth, Red Shrimp & Sweet Peas.

Characterized by its chewy texture, 𝐜𝐚𝐯𝐚𝐭𝐞𝐥𝐥𝐢 𝐩𝐚𝐬𝐭𝐚 is one of the oldest homemade pastas in Italy, born in the region of Molise. Discover it as part of our current 𝐷𝑎𝑖𝑙𝑦 𝑆𝑝𝑒𝑐𝑖𝑎𝑙 menu.

Cooked directly in a tasteful seafood broth made with the most famous Italian soup fish, the pasta is topped with exquisite 𝑔𝑎𝑚𝑏𝑒𝑟𝑜 𝑟𝑜𝑠𝑠𝑜, octopus and clams.
