Someone at the celebration on Friday said, “it’s going to be 15 years next year” as if it only means something at a milestone year.

We are not looking that far off. 14 years is itself a huge accomplishment, way out of range from what we set out to do in 2010.

We are grateful for your presence on Friday, many for the first time. Thank you for finding us. We look forward to getting to know you and serving you better, and everyone finding their friends for life here.

The 3+ years of COVID was some of the toughest times for us. Hong Kong returned as a different city. Many didn’t return at all. Luckily, we’ve established new grounds with your support, which is giving us greater confidence in our business viability.

It’s not the easiest time for those who are dealing with life’s different challenges. We hope to continue to offer a safe space of enjoyment, comfort, support and escape.

The Christmas long weekend is near.

Yeung came as a young man. Unlike Kevin’s ‘Big Brother’ demeanour, Yeung appeared humbled and was eager to follow instructions. He is definitely more Robin than Batman.

Yeung was referred by Kevin and had already been a bartender for 2-3 years when he joined us in 2010. Like Kevin, his has spent some of his prime time serving us. We often tell them to find something grander with a better prospect and not wait for us to close; it may not happen soon.

I still remember his infectious smile and excitement on our opening day. I thought to myself, this person genuinely shared our joy and was a part of the bar.

Yeung is an open book. He is basically focused on doing his job. He is hardworking, willing to learn and listen, and is just a really easy-going person. It’s been a huge pleasure to work with him and Kevin.

People tend to first spot those with stronger and more edgy characters in the room, and take more time to notice the slow glow of those who are more reserved and low key. We are glad that Yeung has grown to have his own fans.

Many people request ‘omakase’ cocktails from him and he often wows the palate with his impromptu recipes. Next time if you don’t have a drink in mind, ask him to make you an omakase.

T:ME started as a budget hobby and we needed to keep our costs down. We were told furnishing the space could be as low as HK$200K. Of course we were fooled. Even with our frugal spending, it still came close to $500K.

Remember what Zoo and Dejavu looked like back then? - glam, chic and classy. We could only think of smart ways to find something that could fill the wall space and not look like cha chaan teng quality.

We had clock projections, which went well with our concrete industrial finish. We got two fish bowls in the toilets. We created a pendant lamp with liquor bottles.

A nice wall display item could cost a few thousand dollars. We got waste acrylic slabs from a material store in Wanchai and glued them together. Both the pendant lamp and the wall display have gone through a few metamorphoses since.

We also needed to take down the fish bowls later. There was a couple of time when one was completely poured down the toilet bowl with the fish inside. And the other one had once turned golden with you-know-what. We couldn’t tell whether these were done under the influence of alcohol.

There’s still risk after we put up a ‘Don’t Kill’ poster. We listened to humanitarian feedback and replaced the fish bowls with plants a few years ago.
