Despite being only 2% Viognier, in its current state, Standish's 2018 The Relic Shiraz-Viognier shows prominent notes of stone fruit and spice, plus the blackberries and blueberries of the Shiraz. Full-bodied, lush and creamy-textured, with a long, silky finish, this beauty should drink well for a couple of decades after its release next year. Drink 2020-2040.

Hongell Family Vineyard, Krondorf. Planted 1912. Warm climate Shiraz and Viognier are uneasy bedfellows for me, generally, but sometimes they work. It’d be a different wine without the Viognier, though, obviously, I can’t state that it would be better. There’s 2% of the V-word in the mix here. Apricot, vanilla bean and white flowers, ripe blueberry, blackberry pie with a spicy crust. It’s silky, juicy, layers of silky and silty tannin, gentle but persistent and maybe even insistent. Succulence and perfume, something of a grilled steak flavour, freshness and density, and sweet sweet length. It’s a warm fruit pie of a wine, but keeps itself so well controlled. It’s very hard not to be impressed. Drink 2022-2038+

standish 是澳洲Barossa的精英級酒莊。 莊主Dan Standish雖然是第六代，可是他卻實際建立酒莊的人 ，父輩以上都是賣葡萄給大酒廠的酒農，沒有自已裝瓶生產。
這間酒莊在祖業相承之下， 有著Barossa引以為傲的百年老藤，指標酒款Standish, Schubert Theorem, Lamella, 和今日介紹的Relic 皆是由百年Shiraz老藤所釀 。其中Relic加了2至3％的Viognier , 典型的北隆河思維，也讓此酒在慣有的藍莓與煙燻氣息之外，多了一些性感花香 ,酒質也相對柔軟一些 。

Dan Standish在1999年決定成立自己的酒莊 ，但這個決定並非突然。在此之前，他早在世界上許多知名酒鄉學習釀酒並擔任釀酒師，如美國 Napa Valley、Sonoma Coast、西班牙 Rioja、法國 Rhone Valley。他1999年回到澳洲家鄉開始釀酒，以嚴格選果打造一系列酒款，葡萄只挑選最好的20%釀造，Robert Parker 認為 Standish 酒莊可成為 Barossa Valley 的指標性酒莊。

他的老藤葡萄園來自家承，1999年時，樹齡就已有96歲 , 但是由於面積不大 ; 單位
產量又低，每年各款加起來的總產量不到10000瓶 ; 多半要排mailing list才有機會，有點似美國膜拜酒的經營方式。不過呢間酒莊不擅於提高售價，主要是因為Dan Standish 本身就是位釀酒師 , 呢間酒莊成立20年以來一直如此 , 算是行家的私房酒。

今日呢支Relic則是出 自Hongell Family葡萄園。採野生酵母 開放式發酵、傳統的
桶式壓榨，最後入法國橡木桶30個月。Relic因有Viognier，所以紅白兩品種共同發酵，標準北隆河想法。Standish的酒裝瓶前不過濾、不澄清；口感濃郁甜美、層次豐富、醇味無窮 。 酒標上有老藤圖樣 ：故得「聖物老藤」
之名。

A driven and serious DP with aromas of chalk, biscuits, apricot stones and lemons. Some spice and dried flowers, too. So sleek and sophisticated. Elegant. Yet, it’s long and powerful, with a sharp minerality. Tight and precise. Reminds me of bottles from the 1980s, such as 1988. It really takes off. Disgorged October 2021. Drinkable on release in January 2023, but better in a couple of years. A DP for the cellar.

Disgorged in October last year, the 2013 Dom Pérignon is a lovely wine, defined by the long, cool growing season. Offering up aromas of crisp stone fruit, tangerine oil, buttered toast, pear, almonds and clear honey, it's medium to full-bodied, ample and seamless, with bright acids and a pillowy, enveloping profile, concluding with a long, saline finish. Vincent Chaperon recalls that shatter at fruit set moderated yields and that a drying east wind in the weeks before harvest helped to maintain the good sanitation necessary to wait to pick at full maturity.

The Montée de Tonnerre has been made in an egg where it still resides, unracked. This has not fallen clear and I don’t see much nose at the moment. Then a few floral notes appear. Evidently more flesh and less chiselled than Vaillons or Montmains.

*One of the most spectacular Premier Crus of Chablis with lots of fossilized outcrops.* The slopes are southwest oriented and are simply separated from the Grand Cru Les Blanchots by a narrow ravine. Montée de Tonnerre is famous for its subtle mix of finesse and intensity. Pure and intense with salty, mineral sharpness.

要講Chablis，各大酒莊如Vincent Dauvissat，Rene Raveneau，JP Benoit Droin 和William Fevre 大家可能都飲過，不過價錢擺係度，質數唔使點懷疑。不夠宜家飲酒唔講性價比，又確實同荷包過唔去😂！三月店長係Burgundy發現一間十分低調、超過200年歷史的Chablis酒莊Domaine Gautheron，目前由第7代Cyril Gautheron 打理。因從不主動參加評分，所以甚少曝光率。Cyril係2000年開始參與酒莊工作，09年開始有機耕種，將品質大大提升，目前把80％出口，減低為50％，注重內銷知名餐廳酒店，逐漸提升知名度。
店長試過以下幾款酒，質數拍得住William Fevre的香氣酸度礦物感，而且酒體好有張力。

La Rioja Alta 904 Gran Reserva 2004 呢支係 西班牙 橡樹河畔酒莊 La Rioja Alta 其中一款旗艦酒。因1904年為第一個年份而取名904 (另一款1890問世 而取名890)，是經典傳統的Rioja, 98日的自然發酵，美國橡木桶(4年舊木桶)陳年4年。

The 2004 Gran Reserva 904 is Tempranillo from Brinas, Labastida and Villalba balanced with 10% Graciano from Briones and Rodezno. The grapes were fermented and macerated in inox vats for 14 days at 28º C, and malolactic fermentation lasted 28 days. The wine aged for 4 years in used American oak barrels averaging 4 years old, during which time it was manually racked 8 times. This 2004, from a superb vintage shows a beautiful light red color with a brick rim and a superb nose redolent of balsamic woods, spices, leather, well-hung meat, incense and truffles. The light to medium-bodied palate shows fully resolved tannins, great acidity and pure, pungent flavors that linger in the mouth forever and that can only be Rioja. This is a wine to smell over and over again. It might sound like an exaggeration, but this wine is still too young and you should wait a little bit and drink the superb 2001 vintage which should still be available on the market while this one matures in bottle. At this quality level the price is superb especially considering that the wine is being released 10 years after the vintage. Drink 2016-2024.

From an 'Excellent' vintage. 90% Tempranillo and 10% particularly successful Graciano from their own vineyards at least 40 years old in Briñas, Labastida and Villalba. Each plot is vinified separately. Aged for four years in four-year-old American casks. Manual racking 'by candlelight'(!) every six months. Barrel selection. Bottled February 2009.
Mid ruby. Intense strawberry fruit with very lively well-hung game notes. Super clean and fresh. Lovely energy and directness. Tannins receding but perceptible. Lots of life ahead of this. Very gentle finish. Real lift and briskness. Not a hint of soupiness! Like a particularly bright jewel.

A ripe youthful yellow hue, the 2021 Chardonnay VGW is fantastic out of the gates, with ripe aromas of white smoke, lemon balm, salty earth, and white peach. From all volcanic soils, the 2021 Chardonnay VGW is ripe through the palate with generous notes of salted pineapple fruit and a rounded feel, although it’s clean as a whistle and has a fresh lift of acidity.

This is a lovely wine. Pale in colour despite its age, it has an amazingly refined nose of matchstick minerality with some grapefruit and lime, and a subtle toasty note. The palate is so bright and sharp, with lovely acidity, but also lots of flavour: this isn’t simply an acid bomb. It’s just so layered and mineral and precise. Still incredibly taut and youthful: this shows the benefit of low pH, but also viticulture and winemaking that enables a low pH, early picked wine to have really nice flavours and concentration. So detailed and intense.Thrilling！

2014年才成立的Les Champs des Thémis
反其道而行，只生產單一園的Bouzeron
共有三片，Les Clous, Les Corcelles和La Cadolle，不是為了標新立異，而是真的非常不同且自有迷人的特性。全都混釀一起會很可惜吧? 畢竟這裡是布根地，充滿礦石感的Les Clous, 超過80年老樹濃厚堅實的Les Corcelles和柔和易飲的La Cadolle都應該被保留啊! Xavier Moissenet從副檢察官轉職專業葡萄農，獨自經營釀造6公頃的葡萄看來相當成功，除了風格精確明析的Buzeron；還釀造非常鮮美爽脆，充滿活力的Mercurey紅酒。‘’

Les Champs de Themis 位於 Bouzeron 村中心，由 Xavier Moisnet 於 2014 年創立。 Moisnet 家族莊園的歷史甚至可以追溯到根瘤蚜之前。他曾經在夜聖喬治擁有一片廣闊的土地，但這段歷史已經結束，他已經遠離酒莊管理很長一段時間了。曾擔任司法官員約12年的Xavier先生在38歲之齡選擇重建這座莊園，這也是Moisnet家族的起源。

Xavier在大學學習法律後，成為司法官員，但2007年，他的轉捩點出現了。由於調動搬到索恩河畔沙隆後，他回到了Pommard一位親戚經營的酒莊，從事收割工作，此前他曾在那裡幫忙。此時，Xavier 誕生了對釀酒的熱情。

辭去長期擔任司法官員的工作後，他在Beaune的 CFPPA 學校（1977 年成立的國家機構，隸屬於農業部，提供與葡萄酒生產相關的教育和培訓）學習了釀酒基礎知識。
2011年從學校畢業後，開始尋找一個可以用自己的雙手建造一切的領域。對Xavier來說，這是個好消息，他正在尋找一個可以從夏洛內丘或金丘輕鬆到達的地方。法國Bouzeron的 Leschenaux 酒莊已掛牌出售，包括其所有土地、建築物、酒窖和啤酒廠。Xavier獲得了這些權利，購買了額外的 Mercurey 的田，並成為 Bouzeron 的生產商之一。目前，Xavier 在Bouzeron經營一座莊園，同時也是 CFPPA 學校的法律教師。

種植：所有 5,80 公頃的葡萄園均於 2014 年獲得生物認證。收割僅靠手工完成。
釀酒：白酒是整串發酵的。經過溫和的脫酒後，用天然酵母發酵。根據特釀的不同，它可以是完全或部分釉化。浸漬需要幾天的時間，然後進行發酵和再蒙太奇，以促進自然發酵，從而帶出甜味。經過2-3週的發酵和壓榨後，紅酒在木桶中發酵。所有特釀均在隔年收穫前或陳釀約一年後裝瓶。

Here's a handsome bottle inside and out. The 2017 Brunello di Montalcino Luce is an exuberant and flashy expression of Sangiovese. The house style favors a contemporary and rich style of Sangiovese, and the wine's velvety approach is measured against the ample texture and fruit weight presented here. This warm 2017 vintage is well interpreted by the folks at Tenuta Luce.
