For this collaboration, we have selected two naturally processed coffees from our producers in Ethiopia and Brazil. This processing method is great for producing this type of sweeter, bolder coffee, and also serves as a showcase of how traditional methods together with modern fine-tuning can yield great tasting coffees while minimizing energy and water use from non-sustainable sources.

耶加雪菲區嘅咖啡農夫主要都係家族式經營，農夫會係屋企附近農地種植咖啡樹，通常佔地不廣。係採收季節，佢地大多數會將採收到嘅咖啡果賣比區內嘅合作社同處理廠做中央處理

Desta Gola係Espresso Alchemy第一位水洗處理嘅單一咖啡農，佢擁有四公頃咖啡農地，大約種左二萬棵顆74-110品種咖啡樹，透過種植咖啡佢能夠養育太太同九個子女，仲可以供最大嘅女係大學讀護理課程

Coffee farmers in Yirgacheffe are typically multi-generational, small-scale landholders, sometimes with only a few acres of land. Most coffees in Yirgacheffe are sold as cherry to centralized washing stations (wet mill) like Kellenso or Kochere.

Desta Gola is our very first Ethiopian washed process coffee from a single farmer in the region. With four hectares of land, around twenty thousand 74-110 trees, Desta Gola has been able to support his large family of eleven (he has nine children), including schooling and sending his eldest daughter to university to study nursing.

On Friday 5 November, our Harbour City shop will donate all the revenue from selling croissants (tomato cheese croissant, avocado cheese croissant, and turkey breast egg salad croissant) to the Early Psychosis Foundation.

Early Psychosis Foundation consists of experienced professionals and academics in the field of early psychosis. They aim to foster the destigmatization of mental health conditions through mass media, public education, first-person sharing, experiential programmes, public events and school programmes. Promoting channels for timely help-seeking and early diagnosis, supporting patients and careers in the recovery process, promoting exercise interventions to facilitate cognitive recovery.

Making keto desserts is challenging because the texture is more difficult to create when using flour-alternatives like almond powder. After many trails with the keto ingredients, we finally sorted it out.

For the matcha We use a ceremonial grade matcha from Uji that's rich in flavour.
