The ‘Cacciatora’ Chicken is a very popular family dish of the Italian tradition,there are the variants that can change from town to town, from province to province or even from door to door!

The most famous ‘Pollo alla Cacciatora’ as is called in Italian, is the one from the Rome area, and the main ingredients are olives, garlic, rosemary, anchovies, white wine vinegar and of course a very nice free-range chicken.

Our version follows the Roman flavour and traditions, but with a little modern twist. Traditionally this dish is always served with the remaining cooking juices of the chicken itself, a very loose sauce that in Italian is called ‘intingolo’, that of course has to be wiped up with a slice of bread! 🍞
