Being a cheese maker is and will forever be the pulse to my vein and the or**sm of my life.
On this 7th miles I am deeply apologize for the imperfections there is, the up and down, and another unpleasant situation you've might experienced.
Surely those will be another mile to be accomplished.

Hi I’m Athan
Those who are frequent enough visiting our page should be familiar with my baby Athan. Not only he is my biological son, is also emblemed as my fav cheese, Brillat Savarin! Both of my Athans have a similar character, they are bold in taste, soft in the interior and fully charming in performace.
Several milking techniques by hand, namely the full hand method, stripping, and knevelen. Full hand or full hand is done on the ni**le which is rather long, so that it can be held with a full hand.
Milking should be done twice with an interval of 12 hours, so as not to damage the ni**les.🍼
Rembulan Dairy Farm which is located on the slopes of Mount Merapi is one of the dairy farms that supplies milk for cheese-making needs at Mazaraat Artisan Cheese. It has 2 types of cows, namely Friesien Holstein (FH) and Jersey Cows.
Holstein Friesian Cow (PFH) is known for its black and white striped coat characteristics. The milk production of FH cows in their area of origin can reach 7245 kg per lactation period. While in Indonesia 4500-5500 liters per lactation period or the equivalent of 10 liters of milk per head per day.
Jersey Cow are characterized by non-uniform colors, some are yellow to black. The horns point upwards with a body weight of 625 kg male and female 425 kg. Milk productivity reaches 2500 liters per lactation period.
Over a thousand types of cheese🧀 exist and are produced in various countries. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet)🐄🐮

16th February, we got a surprising yet delighted visitation from our beloved William Wongso with his team. That day, Wild Eclipse was the star of the event for sure. 🧀
On 19th February, we participated in Pasar Wiguna and officially presented our special Valentine product, which was rose petal jam to our customer directly.🌹
Lastly, on 25th February we were invited to support an amazing pop up dinner hosted by the well-known chef Ragil with his recent project which also supported by Sababay Winery

So many things happened and we’d like to share it all with you.
Starting with the event in 5th February, where we were visited by Rector of Universitas Nahdlatul Ulama Yogyakarta. The visitation was meant to create a bond between academic community and the practition of food industry.
Continue to the 9th February, we were delighted to present you our Cheese Cave that can be accessed officially in Kunena Eatery and Bhumi Poultry & Grocery. We were also honoured to show you the process of Mozarella cheese-making as well as sharing you the story of our cheese.
On Friday night, 11th February, the evening is well spent at Royal Ambarrukmo. We brought our best cheeses, (such as Wild Eclipse, Ibra, Tomme, Alpine, Cantal, Kahf, and Saphera) to the display and with the help of The Chef & Bartender we can deliver the best cheese and wine experience to our customer. 🧀🥂
A little treat will sparks this very moment of love, life and relationship
Rose petal jam made from local grown roses will be a bold staple to show how you cherish every moment spent, every dream shared and every hope to be chased together with your loved ones♥️
