"Add the gin, lemon juice, rhubarb syrup and egg white to a shaker and dry shake. Then add ice, shake again until chilled and strain into your glass. Slowly pour tonic into your shaker to loosen the remaining froth. Then gently pour the tonic/froth mix onto the serve and garnish with a rhubarb knot. "

Here are two easy mixed drinks to try!
Lilac Collins
50 ml Gin
30 ml lemon juice
20 ml lilac syrup *
8 Blueberries
Top with Soda
Muddle the blueberries and add the rest of the ingredients. Shake and double strain into a highball glass. Top with Soda. Garnish with lillac.
Lilac Pisco Sour
50 ml Pisco
20 ml St-Germain
30 ml lemon juice
15 ml lillac syrup *
5 blueberries

Muddle, Shake, Double Strain
Garnish with lilac.
💡 Lilac syrup:
The basic formula is equal parts water and sugar. To make lilac syrup, add equal part lilac blossoms.
⚠️ (It is really important that you only use the lilac florets without the tiny green stems. They can make your syrup taste bitter.)

"Hello dear Bar-Community!
To those who know me (and who don’t 😅), you know what’s following… I don’t only want to present you a drink but a story, which is hidden in that glass. My mom loves tea, she really does. Not only that, she also was convinced about the fact that tea is very healthy. She always wanted me to drink tea, but I wasn‘t really interested. Once, scrolling through some social media, i first saw VivaMate from Organics (Red Bull) and after taking a better look at it I really was impressed. Fortunately I had the chance to be part of a competition, where I can use this great product. I instantly took a look at the requirements and there I read that I can also use Pernod Ricard products. My next step was to think about what I could use and i chose the Olmeca Altos Tequila. I also thought about making it somehow better, but I guess its impossible or almost impossible to improve such a perfect product. So I just infused the tequila with two ingredient, with turmeric and honey to give it that little extra. I filled the little gaps of the story with a homemade Chili-Bitter and White Penja Paragon sirup. Now the story is completed and if you take a close look into the glass, you‘ll see that the drink is also completely. "

Mezcal Tailspin:
37.5ml / 1¼ oz Mezcal
30ml / 1 oz Sweet Vermouth
15ml / ½ oz Green Chartreuse
7.5ml / ¼ oz Campari
Instructions: Add all ingredients to a mixing glass with ice and stir until chilled. Strain into a coupe (I put mine over ice).

- Cherry Syrup - 7.5 ml

- Almond water kefir dilution - 49% - 33.5 ml
Straight into chilled glass [ -2.5 Cº ]
[23.7 Abv 15.5 Brix 4.2 Ph]
Garnish: Mastic Almond Tree Flower
Coffee bitter:
Overproof rum (60% Abv) - 100ml
Sumatra fermented coffee beans - 10 gr
Cold infusion 24 hours
Cherry Syrup:
Rich Cherry Syrup
300 g water
600 g sugar
10g dehydrated cherry
0.5% sea salt
After that sous-vide 50C 2 hour.
Champagne acid
90g water
5g lactic acid
5g tartaric acid
Almond Water Kefir
250g Almond Water Kefir
20g Honey Syrup
60г Water Kefir Grains

After 2 days, pick up and filter - 4.1Bx 4.0ph

30ml / 1 oz. Rhum Agricole
22.5ml / ¾ oz. Lime Juice
15ml / ½ oz. Lemon Juice

1 tsp. Absinthe
1 tsp. Demerara Syrup
45ml / 1 ½ oz. Club Soda
Method:
Wet shake all ingredients, except Club Soda; strain into a Collins glass filled with crushed ice; top with soda; garnish with a citrus wedge or an orchid.
"While many Tiki drinks are meant to invoke the feeling of Polynesia, the Doctor Funk is the only one with roots in the region. Dr. Bernhard Funk was born in Germany in 1844 and migrated to Samoa almost 40 years later. A friend of author Robert Louis Stevenson (Funk was by his side in Samoa when he died 1894) and an amateur mixologist in his own right, the Doctor was renowned for his namesake medicinal tonic. As described in Frederick O’Brien’s 1921, ‘Mystic Isles of the South Seas’ it was “…a portion of absinthe, a dash of grenadine – a syrup of the pomegranate fruit, the juice of two limes, and half a pint of siphon water.”

🧊*smoked paprika, water, ancho reyes, honey, citric acid, salt
Process
Combine ingredients in shaker tin with regular ice and shake until very cold. Strain into glass over smoked paprika ice. Enjoy!

🗣️We had such a crazy year hun? So to celebrate the end of one year and to start fresh a new year I couldnt suggest nothing less a champagne and Jameson Stout to celebrate! This cocktail represents the old with the Jameson Caskmates Stout Edition that is a blended Irish Whiskey that has been patiently finished in Irish craft beer-seasoned barrels. To represent the new year that is arriving, champagne because of the bubbles going to the top.
📝Recipe:
30ml Jameson Caskmates Stout Edition
1 sugar cube soaked with orange bitters
Top up with Champagne
Garnish with Lemon zest and oil
Method: Build
Start with the sugar cube in the glass and add to the sugar cube as much as orange bitters he can absorve like 4. After, add 30ml of your Jameson Caskmates Stout Edition and then top up with champagne. Be careful with the long champagne flutes to not add too much champagne. That's it! Easy and you have more time to celebrate! Enjoy!!

Stir the drink in order to add the right amount of dilution and for temperature perspective but also for marrying the flavours.

"This drink has as a focus the still unpopular spirit in the cocktail scene: cognac.
For too long has been associated with leather couch, fireplace and a small pour into the huge fish bowl.

You are going to make the best dessert cocktail ever! Refreshing, easy to drink, goes really well after your meal!
In the book curious bartender, Tristan told that coffee is a really difficult subject to incorporate in your cocktails because can stole all the other flavours.
He instantly challenged me (and I love challenges) so I started to think how to balance some fruit with coffee and which spirit should I use? I ended with a beautiful fruit, coffee and dessert cocktail! Its beautiful, you really should try it!
📝 Recipe:
45ml Spiced Rum
15ml kahlua
30ml passion fruit puree
10ml Vanilla Syrup
1 Double Espresso
➡️ You can garnish with 3 coffee beans or some coffee or chocolate powder (I used what I had at home - lockdown rules)
🗣️ This cocktail is absolutely one of my favourites here, if I were a judge in the World class competition my friend... I would be delighted to taste this beauty!

How to make the shrub? ⬅️
Equal parts strawberry and Rhubard with sugar, leave it for 2 days and them add white wine vinager until you feel that is a bit acid (we used 35% to mix).
Note: be careful with the vinager, don't add too much, it has to be like a delicious juice and keep in mind that every time of vinager will produce a different flavour and the ratio will be different.
