We are open for lunch Tuesday to Friday from 12.30pm to 2pm and for dinner every Tuesday to Saturday from 6pm.
On Friday last, we had the pleasure to welcome renowned winemaker Patrick Piuze from Chablis, France.
Guests were welcomed to Dax with a welcome drink of Bourgogne tonnerre Lea Boutots 2022 followed by a four course meal from Chef Graham Neville paired with some of Patrick's most wonderful wines.
Patrick works with many grower's in the Chablis region. He does not own any vineyard but has a strong relationship with many wine grower's in the region enabling him to pick the best lots in Chablis, many of which are very old vineyards, where he can collect high quality grapes. He mainly purchases grapes and provides a varied wine range from Chablis ( 4 different vineyards) to Grands Crus (six references) and eleven Premier Crus. Patrick's speciality is bottling wines grown in very specific vineyards that are designed to showcase the particular qualities of those terroirs.

Starter:
Iona Farm Courgette Flower stuffed with Dublin Bay Prawns, Prawn Bisque paired with Chablis, "Terroir Découverte" 2022
Fish:
Fillet of John Dory, New Season Spring Vegetables, Noilly Prat Sauce paired with Chablis 1er Cru "Butteaux" 2022
Main:
Wexford Lamb, Fresh Peas, Grelot Onions, Marjoram Sauce paired with Saivgny-les-Beaune 1er Cru "Les Jarrons" 2020 Domaine Francois André
Lastly, a Sheridan's cheese selection paired with two wines of a Chablis Grand Cru "Bougros" 2018 and Chablis Grand Cru "Blanchots" 2017.

We were recently honoured by Business France, the trade support agency of the French Embassy, for their French Champion Awards 2024 as the best restaurant for France.
