When a 7 year old requests vegan chicken nuggets...challenge accepted! These were super simple to pull together, super cheap (less than €1 for 8!) and super tasty!
1 tin of chickpeas
1 courgette, peeled
3 tbsp nutritional yeast
1 tsp salt
1 tsp paprika
1 flax egg (mix 1tbsp flaxseed with 3tbsp water and leave for 5 mins)
1 slice wholemeal bread
Make breadcrumbs with the bread and set aside 3/4 of the mix. Leave the rest in the blender and add the rest of the ingredients. Blend until mixed. Form into shapes and roll in breadcrumbs. Bake at 200C for 20 mins, then flip and bake for another 10.
Enjoy!!

Be careful of personal trainers giving nutrition advice You might get sold the wrong kind of diet.
My favourite slide from the Irish Nutrition and Dietetic Institutes event on “Keeping nutrition at the core of sustainable diets”..particularly point 5. “Repeat until #3 is pretty f___ing unlikely” 😉😆
This emphasises the importance of only taking nutrition advice from qualified and registered professionals! You wouldn’t amputate your foot if a google search told you the pain probably meant it was gangrene...so don’t ever eliminate major food groups from your diet, resulting in the removal of vital essential nutrients, just because someone who has never studied nutrition recommended it either! We all have unique metabolic reactions to food, so if you’re experiencing any food related health issues, please seek professional advice before making drastic dietary changes ☺️
Some interesting points on the importance of a healthy gut microbiome in this article, and how personalised nutrition is key:
“It is important to know that people have different microbiome, hence what works for one might not work for the other. Dietary fiber that is fermentable by one person may not be fermentable by the other and this makes personalized & data-driven nutrition very important”.
Fad diets and generalised diet plans are unable to cater to the differing needs of a wide variety of people, therefore for particular health or wellness issues or goals, the benefit of seeking personalised professional help from a registered dietician or nutritionist should never be underestimated!

These burgers would literally please the biggest meat loving carnivores! Made with black beans, mushrooms and walnuts, they have the same look and texture of a mince meat burger, but are totally plant based! My seven year old loved them..and they are so cheap to make too!

Spinach is a great source of vitamins, manganese, folate, iron, calcium and potassium..but it can be difficult to get children to eat it🤔 so we make these “Incredible Hulk” muffins..refined sugar, egg and dairy free, and packed with spinach, these go down a treat!! 👌🏼

It’s so great to see such a large global corporation shifting its focus from unhealthy to nutritious foods - and to see the change in consumer spending in this area too!
It’s a long road, but we’re certainly on the right path!

There’s no hiding from the constant research connecting food and nutrition with health and disease states. This is just the latest in a list of research into the direct correlation between what we eat and cancer risk.

Eating foods with low nutritional quality ratings linked to cancer risk in large European cohort The consumption of foods with higher scores on the British Food Standards Agency nutrient profiling system (FSAm-NPS), reflecting a lower nutritional quality, is associated with an increased risk of developing cancer.

Childhood diets create adult health problems - we need to give our children the tools to make the right choices so that we can see the next generation protected against type 2 diabetes, heart disease and cancer
It's easy to associate eating fatty foods with weight gain, but in reality, you could be eating fat free food, and still be gaining weight. Why is that? Sugar...!
An Italian politician has proposed a bill to prevent parents from raising children as vegan. Experts in the field of nutrition are supportive of a vegan diet, and in fact, it can be healthful. The real issue is that all children's diets should be well-planned to reduce incidence of infections and promote a healthy mind and body!
Gentle Nourishment: Raising vegan children - it's possible and thankfully, for now, still legal!
Almonds are rich in monounsaturated fat, fibre, magnesium and copper and they have been shown to lower heart disease risk, control blood sugar and they help control body weight. They are worth including in the diets of both adults and children. For small children who could choke on nuts, almond butter is a great way to incorporate these, and making homemade almond butter is both cheaper than the shop bought version and really easy. Spread on apple slices, it makes for a delicious and nutritious snack.

Osteoporosis is a disease most of us will of heard of, particularly as the food industry force dairy products on us for their supposed calcium rich/osteoporosis preventative properties. In reality, the countries where the least amount of dairy is consumed, there is also less prevalence of the disease. So what exactly is it and what are the risk factors?
Gentle Nourishment: Osteoporosis - what is it and what can you do to avoid it?
We are continuously told that processed foods are not good for our health, but one particular ingredient in some processed foods could literally be causing us permanent damage. Hydrogenated fats are linked to inflammation and heart disease and should be avoided at all costs!
Gentle Nourishment: What are hydrogenated fats and how to look for them
I love to eat out at the weekend, but I hate the lack of variety that is offered to children - why is it ok to offer them chicken nuggets or pasta and to offer parents endless options from salads to steaks and everything in between! Are we insulting them or ourselves? It's time to change it up and allow children the same nutritious food we choose for ourselves!
Gentle Nourishment: Why it's time to shelf the children's menu
There are some days we all need an easy dinner that requires little effort to prepare. Baked potatoes with beans for me was always an ultimate comfort food, but traditional canned beans tend to be very high in both sugar and salt. This is my take on the traditional version, made with split red lentils. Comfort food really can be nutritious too!

This professor's study looked at the link between food elimination diets after intolerance testing and a reduction in chronic inflammation - the results speak for themselves: "At the end of the study, people felt better. They had less joint pain. Stomach aches and rashes went away".

Professor’s research shows link between food intolerance, inflammation NIU nutrition and dietetics professor Judith Lukaszuk wanted to find out if eliminating certain foods from a diet could affect chronic inflammation – the kind related to diabetes, heart disease and obesity.
