Soybeans & Soy Products

Soy-based products are one of the top plant sources of protein.
To start with, soybeans are a complete protein source, which means they contain all nine essential amino acids.

Tofu, tempeh, and natto win for the highest protein choices at 10 grams for tofu and 15 grams for tempeh and natto. Edamame (green, immature soybeans) isn’t far behind with 8.5 grams per 1/2 cup.

One important thing to keep in mind with soy is that soybeans are one of the top GMO crops in the world. Be sure you buy certified non-GMO soy products (and, like all the choices below, certified organic is ideal, too!)

Drink More Water -
"Drink half your body weight in ounces." So, if you weigh 120 pounds, that's 60 ounces, or about two liters of water a day.

I fill up my one-liter water bottle and pour it into a glass, then refill the bottle once, and repeat, and I've got my daily fill, pretty much.

When I commit to this, I notice that my skin feels softer, my head feels better, and I have more energy.

How to Store Cut Vegetables

Be sure to remove the root first, leaving 1-2 inches of stem. The greens can be stored like lettuce and greens, but they have a short shelf life in the fridge. Cut beets can be stored in a container lined with a moist paper towel in the refrigerator.

To freeze, place the cut, cooked, or uncooked beet pieces in a freezer bag. Frozen beets that have been pre-cooked will retain more texture, but uncooked beet pieces are suitable as a component in recipes where texture won’t matter as much, such as to puree for a flavorful soup or an ingredient in a creative cake.

So Fresh and So Clean: How to Store Cut Vegetables

Lettuce, spinach, and similar greens

In the refrigerator: Cut or tear the leaves from the end of the head, if applicable. Wash and dry the leaves thoroughly (such as in a salad spinner). Remove any dead or wilted leaves. Once dry, place in one or two thin layers on top of paper towels. Gently roll the towels, so that you have almost like a jelly roll cake, but the cake is the paper towel and the filling is the greens. Secure with a rubber band.
In the freezer: Freezing leafy greens is not suggested, as they will soften too much and won’t retain their crispy texture.

“Wilted” greens, such as cooked kale, spinach, or beet greens, can be frozen once cooked; drain thoroughly and store in freezer bags for up to a year.
