In case you haven't noticed...chopped salads are totally my jam!

They are VERY versatile, and EXTREMELY satisfying!

makes about 4 servings

๐ŸƒINGREDIENTS:
2 medium English cucumbers, chopped
1 large yellow bell pepper, chopped
2 cups cherry or grape tomatoes, halved
1 medium red onion, diced
1 can of chickpeas, drained and rinsed
ยฝ cup pitted Kalamata olives, halved
ยฝ cup crumbled feta cheese

Tzatziki dressing:
1/3 cup plain Greek yogurt
1 Tbsp extra virgin olive oil
2 Tbsps fresh squeezed lemon juice
1 Tbsp fresh lemon zest
1-2 fresh garlic cloves, minced or pressed
a small handful of fresh dill, chopped
sea salt and fresh ground black pepper to taste, about 1/4 teaspoon each

๐Ÿƒ INSTRUCTIONS:

To make the dressing: place all the ingredients into a mason jar and shake vigorously to emulsify. Or whisk really well in a small glass bowl.
Keep refrigerated until ready to use.

In a large bowl, arrange all salad ingredients. Pour dressing over, and gently toss to combine well.

Allow flavors to blend for at least 10 minutes before eating.

Stays good in the fridge for about 24 hours.

๐ŸƒIngredients:
2 lbs raw jumbo shrimp, peeled and deveined
2 Tbsps avocado or olive oil
4 fresh garlic cloves, minced
1 large fresh lime, juice and zest
2 tsps paprika
2 tsps ground cumin
1 tsp ground ancho chili pepper
1/2 tsp sea salt
1/4 tsp pepper
1 cup cherry tomatoes, sliced
1 large ripe avocado, peeled and diced
1/4 cup chopped fresh cilantro leaves

โœ…Serving ideas: chopped tomatoes, avocado, corn chips or tortillas, lime wedges

๐ŸƒInstructions:

Preheat your oven to 425 degrees f. and line a large rimmed sheet pan with parchment paper.

In a large bowl, combine your shrimp together with your oil, garlic, lime juice, lime zest and all seasonings.

Transfer mixture to your prepared sheet pan and arrange in a single layer.

Bake until your shrimp are pink and opaque, about 10 -12 minutes.

Once your shrimp are done cooking, remove from oven, then top with tomatoes, avocado, and cilantro leaves as shown if desired.

CARDIO CALORIES โฌ‡

Ideally, you should choose a method of cardio that you enjoy the most or if youโ€™re like me, dislike the least.
These are just rough estimates of how many calories youโ€™ll burn in an hour of these methods of cardio. The numbers are NOT exact because there are several variables that will have in impact. The main one is intensity. Are you walking at 3 mph? 4 mph? Are you walking on an incline? Are you running at 6 mph? 9 mph? Somewhere in between? How about jump roping? How fast are you going? Is it continuous? Do you take breaks? Another important variable is your height/weight. The larger you are, the more calories youโ€™ll burn during any of these methods.
However, it is helpful to at least see a rough comparison of the difference between overall calories burned among popular methods of cardio. โ€œAn hourโ€ of cardio isnโ€™t exactly a reliable method of measurement since depending on your cardio method of choice, it can vary pretty significantly.

INGREDIENTS LIST FOR THE GENERAL TSOโ€™S GRILLED CAULIFLOWER
4 cups cauliflower florets
2 tablespoons canola oil
1 tablespoon corn starch
1 tablespoon low sodium soy sauce
1 teaspoon red chili pepper flakes
Chopped spring onion, toasted sesame seeds, for garnish
For the sauce:

3 tablespoons low sodium soy sauce
2 tablespoons unseasoned rice vinegar
2 teaspoons sesame oil
2 tablespoons brown sugar
1 cup vegetable stock
1 tablespoon Sriracha sauce
1 tablespoon grated ginger
4 cloves garlic, grated
1 tablespoon corn starch

DIRECTIONS
1. To make the grilled cauliflower kabobs: Preheat your grill. Place cauliflower florets in a large mixing bowl with 2 tablespoons of water. Microwave for 5-7 minutes to precook. Allow to cool down and transfer to a Ziploc bag.

2. Whisk the canola oil, corn starch, red chili pepper flakes, and soy sauce together in a small bowl. Pour over the top of the cauliflower in the plastic bag and toss well to coat. Marinate for 20 minutes.

3. In the meantime, prepare the sauce: Heat the sesame oil in a small saucepan over medium-low heat. Add the ginger and garlic and stir fry for 1 or 2 minutes. Add all remaining ingredients (soy sauce, rice vinegar, brown sugar, vegetable stock, sriracha, cornstarch) and whisk to combine. Bring to a low boil; simmer for 20-30 minutes, until sauce is thickened.

4. Remove cauliflower florets from the bag and thread skewers and grill until tender and golden. When cauliflower is nearly done, brush with the sauce and grill until slightly caramelized. Transfer to a serving dish and serve the grilled General Tsoโ€™s cauliflower kabobs immediately garnished with toasted sesame seeds and chopped scallion greens and more sauce on the side. Enjoy!

One of my forever favorite meal prep dinners: SPINACH & FETA TURKEY BURGERS w/ CREAMY CAULIFLOWER MASH & GRILLED BROCCOLINI ๐Ÿคฉ๐Ÿ”๐Ÿš๐Ÿฅฆ. Cauliflower mash Monday is as much a thing as turkey burger Tuesday (ikyk ๐Ÿ’๐Ÿผโ€โ™€๏ธ), so if youโ€™re looking for some deliciously simple + satisfying recipes to make this week, these are as appropriate tonight as they are tomorrow (with leftovers coming in clutch later in the week) ๐Ÿ‘๐Ÿปโค๏ธ.

SPINACH & FETA TURKEY BURGERS: these juicy burgers were a huge hit with my family when I first made them last summer (exactly a year ago today!), and theyโ€™ve been in my regular meal rotation ever since. I like to meal prep both the burgers and the mash in advance, and enjoy leftovers for lunch throughout the week)

1 lb. ground turkey (I recommend 85-90% lean; if you go any higher, your burgers will likely be dry) โ€ข 3 cloves garlic, minced โ€ข 4 oz. feta cheese โ€ข 2 cups chopped spinach โ€ข 2 tablespoons fresh parsley, chopped โ€ข salt & pepper, to taste โ€ข 1) Combine all ingredients in a bowl and mix gently with hands, until thoroughly combined. Shape turkey mixture into four patties; set aside 2) In a large pan or skillet, heat 1 tablespoon avocado oil on medium high heat for ~1 minute; add burgers and cook on each side for 7-8 minutes, or until no longer pink in the center.

CREAMY CAULIFLOWER MASH: 1 head cauliflower, chopped โ€ข 3 garlic cloves โ€ข 3-4 tablespoons unsweetened milk โ€ข 1/4 cup parmesan cheese โ€ข 1-2 tablespoons ghee โ€ข 1) in a large pot with a steamer basket, steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth.

Sometimes, I can say no words about my very own transformation because it literally blows my mind just what proportion the physical body is capable of and the way far I've come. The fact of just how much can change when we decide we're going to take care of our body the way it deserves.
