They are VERY versatile, and EXTREMELY satisfying!

makes about 4 servings
๐INGREDIENTS:
2 medium English cucumbers, chopped
1 large yellow bell pepper, chopped
2 cups cherry or grape tomatoes, halved
1 medium red onion, diced
1 can of chickpeas, drained and rinsed
ยฝ cup pitted Kalamata olives, halved
ยฝ cup crumbled feta cheese
Tzatziki dressing:
1/3 cup plain Greek yogurt
1 Tbsp extra virgin olive oil
2 Tbsps fresh squeezed lemon juice
1 Tbsp fresh lemon zest
1-2 fresh garlic cloves, minced or pressed
a small handful of fresh dill, chopped
sea salt and fresh ground black pepper to taste, about 1/4 teaspoon each
๐ INSTRUCTIONS:
To make the dressing: place all the ingredients into a mason jar and shake vigorously to emulsify. Or whisk really well in a small glass bowl.
Keep refrigerated until ready to use.
In a large bowl, arrange all salad ingredients. Pour dressing over, and gently toss to combine well.
Allow flavors to blend for at least 10 minutes before eating.
Stays good in the fridge for about 24 hours.

๐Ingredients:
2 lbs raw jumbo shrimp, peeled and deveined
2 Tbsps avocado or olive oil
4 fresh garlic cloves, minced
1 large fresh lime, juice and zest
2 tsps paprika
2 tsps ground cumin
1 tsp ground ancho chili pepper
1/2 tsp sea salt
1/4 tsp pepper
1 cup cherry tomatoes, sliced
1 large ripe avocado, peeled and diced
1/4 cup chopped fresh cilantro leaves
โ
Serving ideas: chopped tomatoes, avocado, corn chips or tortillas, lime wedges
๐Instructions:
Preheat your oven to 425 degrees f. and line a large rimmed sheet pan with parchment paper.
In a large bowl, combine your shrimp together with your oil, garlic, lime juice, lime zest and all seasonings.
Transfer mixture to your prepared sheet pan and arrange in a single layer.
Bake until your shrimp are pink and opaque, about 10 -12 minutes.
Once your shrimp are done cooking, remove from oven, then top with tomatoes, avocado, and cilantro leaves as shown if desired.

INGREDIENTS LIST FOR THE GENERAL TSOโS GRILLED CAULIFLOWER
4 cups cauliflower florets
2 tablespoons canola oil
1 tablespoon corn starch
1 tablespoon low sodium soy sauce
1 teaspoon red chili pepper flakes
Chopped spring onion, toasted sesame seeds, for garnish
For the sauce:
3 tablespoons low sodium soy sauce
2 tablespoons unseasoned rice vinegar
2 teaspoons sesame oil
2 tablespoons brown sugar
1 cup vegetable stock
1 tablespoon Sriracha sauce
1 tablespoon grated ginger
4 cloves garlic, grated
1 tablespoon corn starch
DIRECTIONS
1. To make the grilled cauliflower kabobs: Preheat your grill. Place cauliflower florets in a large mixing bowl with 2 tablespoons of water. Microwave for 5-7 minutes to precook. Allow to cool down and transfer to a Ziploc bag.
2. Whisk the canola oil, corn starch, red chili pepper flakes, and soy sauce together in a small bowl. Pour over the top of the cauliflower in the plastic bag and toss well to coat. Marinate for 20 minutes.
3. In the meantime, prepare the sauce: Heat the sesame oil in a small saucepan over medium-low heat. Add the ginger and garlic and stir fry for 1 or 2 minutes. Add all remaining ingredients (soy sauce, rice vinegar, brown sugar, vegetable stock, sriracha, cornstarch) and whisk to combine. Bring to a low boil; simmer for 20-30 minutes, until sauce is thickened.
4. Remove cauliflower florets from the bag and thread skewers and grill until tender and golden. When cauliflower is nearly done, brush with the sauce and grill until slightly caramelized. Transfer to a serving dish and serve the grilled General Tsoโs cauliflower kabobs immediately garnished with toasted sesame seeds and chopped scallion greens and more sauce on the side. Enjoy!

Cauliflower mash Monday is as much a thing as turkey burger Tuesday (ikyk ๐๐ผโโ๏ธ), so if youโre looking for some deliciously simple + satisfying recipes to make this week, these are as appropriate tonight as they are tomorrow (with leftovers coming in clutch later in the week) ๐๐ปโค๏ธ.

SPINACH & FETA TURKEY BURGERS: these juicy burgers were a huge hit with my family when I first made them last summer (exactly a year ago today!), and theyโve been in my regular meal rotation ever since. I like to meal prep both the burgers and the mash in advance, and enjoy leftovers for lunch throughout the week)
1 lb. ground turkey (I recommend 85-90% lean; if you go any higher, your burgers will likely be dry) โข 3 cloves garlic, minced โข 4 oz. feta cheese โข 2 cups chopped spinach โข 2 tablespoons fresh parsley, chopped โข salt & pepper, to taste โข 1) Combine all ingredients in a bowl and mix gently with hands, until thoroughly combined. Shape turkey mixture into four patties; set aside 2) In a large pan or skillet, heat 1 tablespoon avocado oil on medium high heat for ~1 minute; add burgers and cook on each side for 7-8 minutes, or until no longer pink in the center.

CREAMY CAULIFLOWER MASH: 1 head cauliflower, chopped โข 3 garlic cloves โข 3-4 tablespoons unsweetened milk โข 1/4 cup parmesan cheese โข 1-2 tablespoons ghee โข 1) in a large pot with a steamer basket, steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth.
