Moms are the best cook in the world, without a doubt and my mom is no exception. She is a very talented person and is exceptional when it comes cooking especially Indian Cuisine. This page has been created solely to share some of her best recipes and dishes from South Indian Sambar or Rasam to North Indian butter masalas, from payasams to Basundhi. So i welcome one and all to please try and savour the good food i have been personally enjoying over the years!!

Prawns is a easy and simple meat to cook but at the same time u overcook it, it loses its taste and texture. My mom's prawn masala is a very simple and effective dish which we have had time and again and yet everytime it evokes the same sense of emotion which is nothing sort of bliss. Best had with steamed rice.

Sakkarai Sadham is a awesome dish and is one of the quick fire dishes to stir up along with another variety rice. Its sweet and super yummy!

Serves – 4

Ingredients:

Raw rice – 1 cup (boiled)
Sugar – 1.5 cup
Grated coconut – 50 gms
Cashew nuts – 6 nos
Ghee – 2 tbsp
Elachi powder – 1 pinch

Method:

-In a kadai, add a ladle of water along with the sugar and allow it to boil.
-Then it begins to reduce and becomes a sticky consistency. Add the grated coconut and stir well for about a minute
-Add the boiled rice to the above and mix well.
-Add the elachi powder, stir well and once its done, remove from heat and set aside.
-Bring a small kadai to heat and add the ghee to it.
-Add the cashews to it and roast it well.
-Add the roasted cashews to the rice and give it a good stir.

Serve Hot.

Puliothare is my all time favourite food. This is so simple, super delicious and ideal for most situations and its super quick to make!

Serves – 7-8

Ingredients:

Tamarind – 100 gms
Gingelly oil – 100 gms
Mustard – 1 tsp
Urad dal – 1 tsp
Fenugreek – 1 tsp
Bengal gram dal – 1 tbsp
Red chilli – 10 nos
Turmeric powder – ½ tsp
Salt to taste
Curry leaves – 10 nos
Jaggery – 1 tsp

Method:

-Soak the tamarind in a large glass of water for about 30 mins and strain the water after that and set aside.
-Bring the oil to heat in a kadai.
-Add the mustard seeds, fenugreek, Bengal gram dal, urad dal, red chilli and temper them well.
-Once crackled and tempered, add the curry leaves and stir well.
-Add the tamarind water to the above along with the turmeric powder and the required salt and stir well.
-Let it boil for about 5 mins and after which the liquid starts to reduce resulting in separation of oil.
-At this stage add the jaggery and give it a stir and take it off heat.
-Add the required amount of the above pulikachal to the hot steamed rice as per your liking.

Serve Hot.

Sakkara pongal or sweet pongal is the main hero of the Pongal festival! Its sweet main course which is super delish and filling!

Serves – 4

Ingredients:

Raw rice – 1 cup
Lentil -1/4 cup (boiled)
Jaggery – 1.5 cup
Cashew nuts – 5-6 nos
Ghee – 50 gms

Method:

-In a pot add 3 cups of water and let it boil.
-Add the boiled lentil to the boiling water.
-Wash the raw rice, drain of any excess water and add to the above boiling mixture and stir once. Allow the rice to be cooked.
-Once the rice is cooked, add the jaggery and stir well. Let it simmer and allow excess water to evaporate.
-Once the desired consistency is achieved, take it off heat.
-In a small kadai, heat the ghee and add the cashew nuts and roast well.
-Add the cashew to the rice mixture and stir well.

Serve Hot.

Aama vadai is a staple during Pongal and its an amazing snack to be had hot along with a chutney especially during colder season. Yummy!

Serves – 5
Ingredients:
Bengal gram dal – 1 cup
Red chilli – 2 nos
Asafoetida powder – 1 pinch
Raw rice – 1 tbsp
Oil – 250 grams (for deep frying)
Curry leaves – 10 leaves
Salt to taste

Method:

-Soak the dal along with the raw rice in 2 cups water for about 1-1.5 hours.
-Once soaked drain the dall, add the red chilli and grind it coarsely.
-Add the asafetida, salt and curry leaves to the above grounded batter and stir well.
-Once done, pat the vada of your desired size and deep fry them in hot oil.

Serve Hot.

P**l Poli is my all time favourite sweet. Its so tasty that you just cant stop with one.Do give it a try and you will realize how tasty this gem of a sweet is!

Serves - 4

Ingredients:
Refined flour – 250 gms
Milk – 1 litre
Sugar – 10 tbsp
Kesar powder – 1 pinch
Salt – 1 pinch
Elachi powder – 1 pinch
Oil – 250 gms

Method:

-In a mixing bowl add the flour along with the salt with desired amount of water to make it like chapathi /poori dough consistency. Once mixed keep it under cover with a lid.
-Boil the milk along with the kesar powder and elachi powder to a medium consistency and once its reached, lower the flame and add the sugar and stir till its dissolved. Let it simmer for 5 mins and let it rest after thant.
-Bring the oil to heat in a kadai.
-Take a small ball size dough and flatten it with a rolling pin into a circle. Water one half of the circle’s edge and fold it into a semi circle.
-Slip this into the hot oil and deep fry it until cooked.
-Once its cooked, remove from oil, drain it and put it in the rested milk. Leave it for a minute.
-Then remove the soaked poori from the milk and arrange it in a flat plate. Repeat for the rest of the dough.
-Once all the dough is done, pour the rest of the milk over arranged poli and let it soak and rest.

Serve Rested or chilled.

My all time favourite potato salad! So easy, quick and extremely yummy!

Serves 6

Ingredients:

Potatoes - 1 Kg (cleaned,boiled and diced)
Mayonnaise - 1 1/4 cup
Onion (medium) - 1 (diced)
Yellow mustard - 1 tsp
Salt - 1 tsp
Black pepper - grounded
Paprika for garnish

Method:

-In a mixing bowl whisk together the mayo, salt,black pepper, mustard until evenly combined.
-Add the diced potatoes to the mayo mixture, along with onion & toss gently until evenly combined.
-Taste and season with paprika, to taste.
-Transfer the potato salad to a serving bowl, cover, and refrigerate for 1-2 hours to chill.

Serve Chilled
